Khaja

The ingredients that are needed for preparing Khaja:
  • 1 and ½ cup Maida
  • 1 cup Water
  • ½ cup Jaggery
  • ¼ table spoon powder of Cardamom
  • 1 table spoon Ghee
  • More Ghee for deep fry
Take the jaggery and water mixture in a bowl and heat this mixture until the jaggery dissolves in the water. Strain it and then keep it to get cool. Then mix the cardamom powder and ghee in the flour. Mix the jaggery water in the flour. Keep in mind that the mixture should have to be tight. Break the dough into 20 parts. Knead each of the 20 parts with palm and then roll each of them into 4 rounds. Make many thin slits with knife on both of the body sides. Then keep then aside preferably on a clean piece of cloth at least for an hour so as to get dry. Deep the Khaja into hot ghee and low flame until they appear golden in color. Drain the Khajas and then keep then in a bowl. Once they become completely cool keep them into a airtight container.
