Jammu and Kashmir Saffron


Saffron- one of the three colours which constitutes the Indian flag. The humble orange stigma of the Crocus Sativus plant is used in a multitude of things from Medicine to food flavoring. There are very few places in the world where saffron grows. Jammu and Kashmir has the honor of being one of those few places and the rare Jammu and Kashmir saffron is something everyone yearns to get a pinch of. In fact, tourists visiting the state always return home with a few grams of this expensive spice, an integral part of Jammu and Kashmir shopping.

In Jammu and Kashmir, saffron is grown at a place called Pampur, a small township located about thirteen kilometers from the capital of Srinagar. In the plant, the only valuable part are the orange stigmas of the purple flowers. The flowers blossom in autumn. Then the meadows take a purple hue mile after mile.

The populace of Jammu and Kashmir has a high regard for Saffron. The quintessential Indian delicacy, 'Biriyani' , cannot be prepared without saffron. Also called Zaafran, it is a major ingredient of Kahwa, the traditional tea drunk by the people of Jammu and Kashmir.

The people of Jammu and Kashmir have perfected the art of growing Saffron over the centuries. This plant requires careful attention and cultivation techniques. The valleys of Kashmir provide the necessary slope and soil type for this plant to flourish. The rainfall must be measured and the moisture in the air must be optimal. The weather of Kashmir fulfils all these desiderata.

Saffron deserves a special mention in the history of Jammu and Kashmir. Wars have been fought to gain control of Saffron fields. Thus Jammu and Kashmir Saffron is a prominent inclusion in the economy and culture of the state.
