Kidney beans are famous the world over and specifically in the South American continent. In India, we use red kidney beans which are called rajma in the Hindi language. Rajma are rich in proteins and carbohydrates and is a very popular vegetarian curry across the states of Jammu & Kashmir, Uttar Pradesh, Punjab, Himachal region, etc. Rajma are equally liked by people with rice or with naan/ roti. Rajma masala is cooked by frying the onion-based masala and adding spices into it which bring out a very nice flavor in the dish which everyone at home can relish. This dish can be a part of your regular meal or even party menu. So, go ahead and try this recipe of yummy rajma masala.

Ingredients needed for Rajma Masala

Rajma – 1 cup (soaked overnight)

Oil – 4 tbsp

Onion – 3 cups (chopped)

Ginger Garlic paste – 1 tsp

Tomato – 1 cup (chopped)

Coriander powder – 2 tbsp

Turmeric powder – 1 tsp

Red chili powder – 1 tsp

Roasted cumin powder – 1 tsp

Salt to taste

Garam masala powder – 1 tsp

Fresh coriander for garnishing

How to make Rajma Masala

Boil rajma with salt till they are soft

Heat oil in a heavy-bottom pan.

Add onions and fry till golden brown.

Add the ginger garlic paste and fry till the raw smell is gone.

Add tomato and fry for a minute.

Add coriander powder, turmeric powder, red chili powder, roasted cumin powder, salt and garam masala.

Fry till oil is separated from the sides of the pan.

Add a little water during frying, if required.

Add boiled rajma and 2 cups of water.

Cover and cook for 10-15 minutes.

Garnish with fresh coriander.

Serve hot with rice or naan.
