Coconut Curry

Coconut Curry is a mouth-watering delicacy that is very popular in the southern India, especially in Pondicherry. Like the whole of India, Pondicherry is also a place that has its own authentic reci-pes that reflects the choice, taste and preference of food of the people in that particular region.

Coconut is something very close to all the people of the whole of southern India. The taste of co-conut has a refreshing flavor. Coconut curry is an invincible part of South Indian Food and an in-separable part of Pondicherry cuisine. It serves as a sweet and sour dip for every dish.

To cook the delicious Coconut Curry or Coconut 'Chutney', one would need the following ingre-dients:

  • Half of a coconut grated
  • One-tablespoon urad daal, which is yellow lentil
  • One-teaspoon mustard seeds
  • Five to six curry leaves
  • Two tablespoons oil
  • Two dry red chilies
  • Salt to taste

    To prepare the curry of coconut one first needs to make a paste of the white portion of coconut. Then, in a small pan, the oil needs to be heated. When the oil is hot, mustard seeds, dry red chil-lies, urad daal and curry leaves are to be added. The mixture needs to be fried for some time, until the red chilies do nit turn brown in color. When the mixture seems to be ready, it should be added to the coconut paste and it should be blended very well. Salt as much of it is required, is to be added to the paste and the mouth watering appetizing Coconut Curry is already to eat.
