  • Two large sized potatoes that are peeled and chunked
  • Two cups of cauliflower florets
  • Eight fresh mushrooms that are cleaned and sliced
  • Half a cup green peas
  • Two garlic cloves that are crushed
  • One tablespoon curry powder
  • One teaspoon coriander ground
  • One teaspoon turmeric
  • A teaspoon cumin ground
  • One fourth of teaspoon dry mustard
  • One fourth of a teaspoon red pepper flakes crushed
  • Water

    The method of cooking Curried Vegetables, one of the popular Pondicherry cuisines, is as follows:
    • Cook the garlic and the onion in one cup of water for some time.
    • Then add the green pepper, celery leaves and carrots in it.
    • Add the seasonings and stir to cook the whole thing for about ten minutes.
    • If need be, add some water to avoid sticking.
    • Then put in the potatoes and about three cups of water.
    • This needs to be covered and cooked for as long as fifteen minutes.
    • The cauliflower is added the next and it is cooked for another fifteen minutes.
    • After this, the peas and the mushrooms should be added and again it is to be cooked for ten minutes.
    The delicious and nutritious Curried Vegetables is all ready to eat.
