Stuffed Cabbage

Stuffed Cabbage is a delicacy that is quite popular in the union territory of Pondicherry. The tangy taste of the Stuffed Cabbage is a major hit not only among the local people in Pondicherry but also with the tourists. It is a perfect snack on a lazy evening or an appetizer before a full course meal.

To prepare Stuffed Cabbage, one of the popular cuisines in the union territory of Pondicherry, one would need the following ingredients:

  • One medium size cabbage
  • One cup cooked rice
  • An egg
  • Tomato juice
  • Garlic powder to taste
  • One tablespoon white sugar
  • One tablespoon vinegar
  • Water

  • To prepare Stuffed Cabbage one would first need to put the cabbage in a large pot and cover it with water. The cabbage needs to be boiled for about fifteen minutes until it becomes soft. Then the water is to be drained and one has wait for the cabbage to cool. The hard veins in the cabbage leaves are to be removed.

    While one allows the cabbage to cool, one can start preparing for the stuffing. In a large bowl one needs to mix well the cooked rice, the egg and garlic powder. Then taking small amounts of the mixture in the palm of one's hand make balls. One needs to put the balls in the center of a cabbage leaf and fold the leaf from all sides so that it looks like a roll. Then one has to place the rolls of Stuffed Cabbage on a large pot, the bigger leaves on the bottom. Then one should add vinegar, juice of tomato, sugar and water to cover the whole thing. Then cook the cabbage rolls in low heat for about sixty minutes. One has to be careful and keep a watch on the cabbage to avoid burning of the bottom of the cabbage leaves.
