Shimi Ka Achar



Pickles come in a variety of taste and flavor. Pickles mainly follow the art of food preservation and are found in unique variety. Among the pickles made in north eastern states, the Shimi ka achar of Sikkim is a spicy and delicious item which brings water in the mouth at its first sight.

Sikkim cuisine prepares many of India's best best pickles out of some seasonal vegetables and fruits. Among the favorite pickles of Sikkim, Shimi ka achar pickle is the most delicious one.

Ingredients needed to prepare the recipe of Shimi ka achar:

  • Shimi / beans 1/ 2 kg
  • 100 gm. Sesame seeds
  • 6 to 7 sliced green chilly
  • Lemon juice 1 tea spoon
  • Salt according to the taste

    First, take the beans in a bowl and keep the bowl under running water to wash them. After that cut the beans into thin slices and boil them maximum for 5 minutes to get then soft. Now take the sesame seeds and roast them for a few minutes. After that send the sesame into a grinder to paste the sesame seeds.

    Once both the beans and sesames are prepared, then put a pan on an oven and pour oil in it. Fry the sliced chillies in the oil for a minute. Now take the fried chillies and mix them with the strained beens. Take the sesame paste and mix it with the beans. Add salt and pour the lemon juice into the mixture and mix all these ingredients together. Keep the whole mixture in a plate and your special item Shimi ka achar is now ready to take with any rice items or roti.

    Shimi ka achar is very popular among the peasants of Sikkim.
