Luchi

Luchi is the most popular breakfast delicacy for the Bengalis. This is one of the famous Indian Breads. Luchi is a fried food and its presence is considered to be mandatory in any Bengali Feast.

The ingredients required to make Luchi are listed below One-third cup of Flour (Maida)
One-fourth teaspoon of Salt
One-fourth teaspoon of Sugar
Three tablespoon of Ghee
Warm water as per requirement (generally half cup)
Some more Ghee or White Oil for dip fry

How to Prepare Luchi

Mix the flour, salt and sugar very well. Now put some melted ghee into it. Use some warm water to prepare soft but stiff dough. Knead the dough well and keep it covered with damp cloth for around thirty minutes. Now uncover it and knead it a bit before using. Make small balls out of this dough. Take one ball, dip a corner of it in ghee and roll it so as it appears 5 or 6 inches round. This act has to be repeated while making each piece of Luchi. Now take a kadhai and heat plenty of white oil or ghee in it. After it is heated well, put one rolled out piece of the dough. It will immediately start swelling up. Use a spatula to fry it well. Turn it and also fry the other side till it appears golden brown. The frying part of preparing Luchi takes a few seconds. Serve it very hot with Indian curries.

Luchi tastes best when teemed with Alurdom, another favorite dish of the Bengalis.
