How to Prepare Rosogolla
Boil the milk and then let it cool for a couple of hours. As it cools you need to remove the upper layer of cream that is formed. Now heat the milk again and add half teaspoon of citric acid dissolved in some water, to it. Slowly stir the milk as it boils. Continue stirring till it totally gets curdled. The milk will then turn into a soft semi solid mass. Let it remain in this state for five minutes and then stain the milk in a fresh muslin cloth. This soft mass is called the 'Chena'. Place the 'Chena' in a wide plate pressing out the excess water from it. In the mean while, mix sugar with water and boil it in a saucepan. Boil till it appears to be syrupy. Make ten to twelve balls from the dough of 'Chena' and let them into the boiling syrup. Let it cook for 15 minutes. Take off from heat and add rose essence to it. The most delicious Sweet from Bengal is thus ready to be served.
