Baingan has three to four varieties available in the market. While the thick ones are generally used bharta the long ones are used in curries and as ingredient to sambhar. The smallest variety can be used to fill inside with spices to make Bharwan Baingan. This dish is really unique and good for any main course, however since it is a bit dry it is best to serve it with some dal or any other curry. The taste comes out really nice as the inside of the baingan gels very nicely with the spices. This appearance of the dish is also inviting and its sure to win you some accolades. All you need is (serves 4)

Small baingan – 5-6

Oil – 4 tbsp

Onion – 1 cup ( finely chopped )

Ginger garlic paste – 2 tsp

Coriander powder – 2 tsp

Red chili powder – 1 tsp

Turmeric powder – 1/2 tsp

Garam masala powder – 1/2 tsp

Amchoor powder – 1 tsp

Salt to taste

Coriander for garnishing

Bharwan Baingan Recipe

Preparation time: 10 minutes

Cooking time: 20 minutes

Heat 2 tbsp oil in a pan.

Add onion and fry till golden brown.

Add ginger garlic paste and fry for 3-4 minute.

Add coriander powder, red chili powder, turmeric powder, garam masala powder, amchoor powder and salt and fry for 2-3 minutes.

Add little water if required.

Remove from heat and let cool.

Make 2 slits in baingan keeping the end intact.

Fill the onion filling in between the slits.

Heat the remaining 2 tbsp oil in a pan.

Arrange the stuffed baingan in the pan.

Simmer the heat to low.

Cover the pan and cook the baingan for 10 minutes on each side.

Put on a serving platter.

Garnish with coriander leaves.

Serve.
