Just like millions of Indians, I often make parathas for breakfast. I make mostly traditional parathas; however, parathas are so tantalizingly flexible to experimentation that I decided to make Broccoli Paratha.  This amazing vegetable filled in the paratha creates a unique taste and color which is appealing and delicious. The paratha can be had with plain dahi or with your choice of curry or achaar. Broccoli Paratha is made by filling grated broccoli with other spices in the whole-wheat kneaded balls and cooked on a tawa with some desi ghee. You can get more creative and fill in different mixture of broccoli with onions or cottage cheese or maybe cauliflower. Ingredients needed for Broccoli Paratha

(serves 2 )

Whole wheat flour – 2 cup

Broccoli – 1 cup ( grated )

Ginger – 1/2 inch piece ( grated )

Salt to taste

Green chili – 1 ( chopped )

Onion – 1 ( chopped )

Garam masala – 1/2 tsp

Oil for frying

How to make Broccoli Paratha

Make a soft dough with wheat flour and water.

Cover and keep aside for 10 minutes.

Mix grated broccoli, salt, ginger, green chili, onion and garam masala in a bowl.

Take a small-sized ball of dough and slightly roll it.

Keep 2 tbsp of filling in the center of the dough and bring the ends together.

Roll to make a ball.

Dust and roll to make a flat disc, about 6 inches in size.

Heat a griddle and fry the paratha from both the sides using little oil.

Serve hot with aachar and curd.
