Has it been a while again having heavy meals every day? It happens to me once in a while and I was today in a mood to have something light while there were not too much of fruits and vegetables available in the fridge. I made this Citrus Salad with the leftovers of past few days. All I had with me was some lettuce leaves, radish, cheery tomatoes and an orange, which I had just mixed together and made this amazing tasty salad. There is little I can say about the amazing health benefits Citrus Salad as it speaks for itself. Each of the ingredients is just packed with most useful vitamins and nutrients. Lettuce leaves has good quantity of Vitamin A, K and potassium, while orange and tomatoes are a great source of Vitamin C and radish in all vitamins and fiber. The salad turned out looking awesome and not just me but the kids loved it too. I’m sure you too can make it quickly and enjoy a light and healthy meal with your family. So here is a simple recipe for Citrus Salad.

All you need is

Lettuce leaves – 1 or 2

Cherry tomatoes – 8-10

Orange – 1

Radish – 3 or 4

Salt to taste

Black pepper – 1/4 tsp

Olive oil – 1 tsp

Orange juice – 2 tsp

Citrus Salad Recipe

Wash and tear the lettuce leaves in small pieces.

Slice radish into thin slices.

Cut cheery tomatoes into halves.

Mix all above ingredients in a bowl and pour olive oil and orange juice.

Add salt and black pepper and toss the salad in a bowl.

Decorate with peeled orange slices and serve immediately.
