Kerala Appam – Indian pancake

 

Kerala Appam is a famous kind of Indian pancake made in its southern most state. It can be served for breakfast or lunch or dinner. It is made with rice and coconut mixture and hence has a very bland taste. Most people from this part of the country like to have it with either vegetable or non-vegetable stews or egg or any other curry. The appam’s are characterized through a round preparation which is slightly thick in the middle. Appam pans are available from leading kitchen ware manufacturers and I could lay my hands on one of it to make it for my breakfast. It turned out very nice in taste and went well with my vegetable curry. Kerala restaurants may use coconut oil in the preparation, however you can use your choice of vegetable oil and serve it in any of your meals. I give you here a simple to use Kerala Appam Recipe which you will thoroughly enjoy.

All you need is (serves 4)

Sona masuri rice – 2 cup

Coconut – 1 cup (grated)

Baking soda – 1/4 tsp

Salt – 1 tsp

Coconut oil – 2 tbsp

Kerala Appam Recipe

Preparation time: 20 min + fermentation time

Cooking time: 20 min

Soak rice in water for about 2-3 hours.

Grind the rice and grated coconut to form a fine paste.

Add baking soda and keep for fermentation for about 6 to 8 hours.

Once the batter has fermented, add salt and mix well.

Line the appam pan with coconut oil.

Pour 1 tbsp batter in the pan, cover and cook for about 2-3 min on medium heat.

Serve hot appam’s with your choice of curry or stew.
