Srikhand is a popular dish from the states of Maharashtra and Gujarat and has formed part of their traditions for times immemorial. It has been served as part of regular thali meals in Gujarati restaurants, generally it is served as a dessert however some people also like to eat it with poori. Srikhand is prepared by draining the water out of the curd (dahi) and adding other ingredients along with sugar.Today I have added the wonderful flavor of kesar with some digestive elaichi to make Kesar Elaichi Srikhand. The thick curd that we get after hanging the dahi is called Chakka. The Chakka can be made in advance and any flavors of your choice can be added to it. It is easy to prepare any kind of Srikhand at home using home made dahi. Kesar Elaichi Srikhand would be loved by everyone in the house and can be served any time of the day. Ingredients needed for Kesar Elaichi Srikhand

(serves 3-4 )

  • Dahi – 3 cups
  • Sugar – 1\2 cup (grind it to a powder)
  • Elaichi powder – 1 tsp
  • Kesar – 2 pinch
  • Milk – 1 1/2 tbsp
  • Dry fruit for garnishing (cut them to slivers)

How to make Kesar Elaichi Srikhand

Preparation time: 10 minutes

Cooking time: 10 minutes

  • Take milk in a small bowl and dip the kesar in it for about half an hour
  • Hang the dahi in a cotton cloth to drain out all water.
  • Add sugar, elaichi powder and milk with kesar  in the dahi and mix well.
  • Garnish with dry fruits and put it in the fridge for a couple of hours.
  • Serve cooled Srikhand.
