For the potato filling: Boil 3-4 potatoes and keep aside. Heat some ghee in a pan. Add the mashed boiled potatoes, rock salt, 1/2 tablespoon red chili powder, and 1/2 tablespoon finely chopped green chilies and ginger to the oil. Cook the potatoes until it turns light brown in color. Keep aside.

For the dosa: Add one cup of kuttu ka atta, water and two tablespoons of yogurt in a mixing bowl to make a smooth batter. Sprinkle rock salt and let it sit for about 5 minutes. Put a dosa tava on a low heat. Pour one ladle of dosa batter on the tava and spread it. Let it cook for a minute and then pour some drops of oil all over. Once cooked, spread the potato filling in between and remove the dosa from the tava. Fold it twice and serve!
