Sabudana is the next most popular fasting food after kuttu or singhara flour. It makes you feel satiated for hours and provides energy during fasting. This khichdi is not only tasteful but also healthy to be relished during Navratri fasting.

Recipe

Rinse the sabudana well with water until the starch gets removed. Transfer the sabudana to a bowl and add water to it. Keep it overnight. Drain the excess water from the bowl. In a pan, heat some oil. Add cumin seeds and let them sizzle. Add some diced potatoes and cook them for about 3-4- minutes. Once they are cooked, add the raw peanuts and cook again for 3-4 minutes. After the peanuts have turned brown, add sabudana to the pan with salt and sugar. Keep stirring and cooking until the sabudana turns translucent. Remove the pan from the flame and garnish the khichdi with lemon juice and coriander leaves.
