Papad are very famous in the Indian culture as accompaniments to food. Most regions in India use papad with different ingredients. These can be made out of rice, or lentils like urad and moong. Most varieties of papad that are available in market are dried so they can be made ready to serve in a matter of a few seconds. Its easy to see a papad being fried or cooked over gas and now even being roasted in a microwave. You can actually use the same papad in an innovative way and make it in to rolls fried and filled with potatoes and cottage cheese (paneer). This makes a unique and simple dish which can be served as a snack with your choice of chutney or ketchup. The rolls have a pleasing and inviting appeal and would be loved by all. Ingredients needed for Papad Rolls

Papad – 3-4

Oil for frying

Potato – 2 (Boiled and grated)

Paneer – 1/2 cup   (grated)

Green chili – 2 (chopped)

Fresh coriander – 1 tbsp (chopped)

Salt to taste

Garam masala – 1/2 tsp

How to make Papad Rolls

Mix boiled potatoes, paneer, green chili, coriander, salt and garam masala in a bowl to make a filling.

Take water in a deep plate.

Dip the papad in the water. It will become soft.

Now immediately fill it with a tbsp of filling and seal the ends.

Deep fry in hot oil from both the sides.

Serve hot with ketchup.
