If you are looking for an anytime snack, Ragda Patties is an awesome choice. The dish is made with potato patties covered with a white peas curry called ragda and then garnished with usual chaat stuff. When I’d it for the first time, I just could not resist another plate. You too would love this preparation, although it takes some time to make this chaat, the effort is worth it. So when you have some time on hand and in a mood for something different try this Ragda Patties Recipe.

All you need is (serves 4)

For Patties

Potatoes – 2 cup (boiled & mashed)

Cornflour – 3 tsp

Salt – 1 tsp

Oil to fry

For Ragda

White peas – 2 cup (soaked overnight)

Oil – 1 tbsp

Onion – 1 cup (chopped)

Ginger garlic paste – 1 tsp

Green chili – 1 tsp (chopped)

Tomato – 1 cup (chopped)

Red chili powder – 1 tsp

Turmeric powder – 1 tsp

Salt – 2 tsp

For Garnishing

Mint coriander chutney – 4 tsp

Curd – 4 tsp (whisked)

Saunth – 4 tsp

Onion – 1/2 cup (finely chopped)

Fresh coriander – 1/4 cup (finely chopped)

Zeera powder – 1 tsp

Chaat masala – 1 tsp

Sev – 2 tsp

Ragda Patties Recipe

Preparation time: 15 min.

Cooking time: 45 min.

Mix all patty ingredients in a bowl, divide in equal parts and make patty shapes.

Heat oil on a flat tava and shallow fry until golden brown from both sides.

For Ragda

Boil the peas in pressure cooker with 4 cup water for 7 to 8 whistles. Strain and keep peas and water aside.

Heat oil in a pan, saute onion till golden brown.

Add ginger garlic paste and green chili and saute for another 3-4 min.

Add tomatoes and saute till the oil leaves the sides.

Add dry masala for ragda and cook for 3-4 min.

Add peas and cooked water and boil for 3-4 min.

For Plating

Lay the patties in the serving bowl and pour ragda over it.

Garnish with curd, saunth, mint coriander chutney, fresh coriander, onions, zeera powder, chaat masala and sev.

Serve hot.
