Everyone likes to make regular vegetables into something unique. Indian cuisine gives us so many opportunities to try our hand on combinations of the vegetables, dry fruits, spices etc. Today I mixed up two easily available items gobhi and makhane with other dry fruits and spices to make a Shahi Gobhi Makhana. A very simple dish which can go well with most tastes and a fancy name to win the accolades. The dish can be served with roti or naan or on the side to the rice. You too can try your hand on this dish with this Shahi Gobhi Makhana Recipe.

All you need is (serves 4)

Onion – 1/2 cup (cut in small pieces)

Tomato – 1/2 cup (cut in small pieces)

Cashew nuts – 12 to 15

Khaskhas – 1 tsp (soak and grind to a paste)

Ginger – 1 tsp (grated)

Gobhi – 2 cup (cut in medium pieces)

Makhana – 2 cup

Garam masala – 1/4 tsp

Red chili powder – 1/4 tsp

Kasoori methi – 1 tsp

Salt to taste

Cream – 1 tsp

Dahi – 1/2 cup

Oil – 2 tsp and for frying

Fresh coriander for garnishing

Shahi Gobhi Makhana Recipe

Preparation time: 15 min.

Cooking time: 25 min.

Soak cashew nuts in warm water for 10 min.

Make a smooth paste with cashew nuts, tomato and ginger. Keep aside.

Soak gobhi in salted warm water for a min. Drain and keep aside.

Deep fry the makhana and keep aside.

Heat oil in a pan and saute the onions till soft.

Add tomato, cashew nut and ginger paste and saute for 2 min.

Add khaskhas paste, kasoori methi, garam masala, red chili powder and salt and saute for 2 min.

Add little water and keep frying till the oil leaves the sides.

Add gobhi and makhana and cook till gobhi is done.

Add dahi and mix well.

Garnish with cream and fresh coriander.

Serve hot.
