There are always times when you need something quick for your meal and are not in a mood to spend a lot of time in the kitchen, sometimes even with left overs. A lot of times, I have white rice left over after a party or even a regular family meal. Fried rice is one amazing creation which can enthuse a  lot of flavors to the rice and making it look, feel and taste like a newly created rice dish. I tried adding a few more south Indian flavors to it to make south Indian fried rice. An addition of sambhar powder, chana dal, urad dal along with other ingredients makes it taste really unique. It can be easily had only with plain curd or some raita and salad on the side and is a proper meal in itself. You could even try and add some scrambled eggs or shredded chicken to make it egg- or chicken-flavored south Indian fried rice. Here is a simple recipe to try in your own kitchen.

Ingredients

  • Cooked rice – 2 cups
  • Oil – 2 tsp
  • Curry leaves – a sprig
  • Mustard seeds – 1/2 tsp
  • Chana dal – 1/2 tsp
  • Urad dal – 1/2 tsp
  • Onion – 1 (chopped)
  • Tomato – 2 (thinly sliced)
  • Green chili – 1 (chopped)
  • Sambhar masala – 2 tsp
  • Salt to taste
  • Turmeric powder – 1/2 tsp

How to make South Indian Fried Rice

  • Heat oil in a pan.
  • When the oil is hot, add curry leaves, mustard seeds, chana dal and urad dal.
  • Cook for 30 seconds.
  • Add onion and fry for a minute.
  • Add tomato, sambhar masala, turmeric powder, green chili and salt.
  • Fry for 2 minutes.
  • Add the cooked rice.
  • Mix well.
  • Serve hot.
