Much like the country itself, the Indian cuisine is full of varieties and colours. The spices and flavours of our cuisine never fail to salivate the toughest of tongues.

As the festive season is around the corner, streets start filling up with the most delicious of delicacies. Now, imagine yourself taking a gastronomical journey down the market while being surrounded by spicy golgappas and tangy chaats.

Wouldn’t it be more amazing if you get to savour some of the most delectable chaats in the luxury of your own house? We know variety is the spice of life so we have tried to bring sweet, savoury and tangy chaat recipes for you which you can easily make at home.

Dahi Bhalla Chaat

Call it Dahi Bhalla or Dahi vada, the most loved drooling chaat is popular in every part of India be it north or south. This relishing chaat can invoke hunger just by a look.

Note: The cup measures 250ml

Ingredients-

Urad daal- 1/2 cup
Moong dal- 1/2 cup
Cumin seeds – 1/2 tbsp
Garam Masala
Curd- 1/2 kg
Salt
Oil
Chilli powder
Sweet chutney
Green chutney
Potato – 2 (Boiled)
Chaat Masala

Steps to follow-

  • Mix urad daal and moong daal and soak them for at least 6 hours.
  • Now, drain the water completely and grind them together.
  • Also, add cumin seeds and grind them into a smooth fluffy batter.
  • Stir the briskly for a couple of minutes to make it more fluffy.
  • Add salt to the batter and brisk it again.
  • Take a pan, heat the oil and add spoonfuls of the batter into the pan.
  • When they become golden brown take them out and keep them over kitchen towel.
  • Once they get cooled, soak them in water for at least 20 to 25 minutes.
  • Meanwhile take a large bowl and whisk the curd until it gets smooth.
  • Now, take the vadas out and press them with light hand to remove water and mix them with curd.
  • Pour sweet chutney, green chutney, and boiled potatoes into the mixture.
  • Top up with some namkeen and more chutney.
  • You can add spices as per your taste.
  • Serve immediately.

Paani Poori Chaat

So many bursts of taste and flavours can be felt in the mouth when it comes to pani puri. No person who loves this ambrosial chaat can resist themselves from eating just one.

Ingredients

Paani Poori or golgappe
Potatoes – 4 (boiled and chopped)
Onion – 2 (chopped)
Cumin powder
Chaat masala powder
Red chilly powder
Jaljeera
Sweet chutney
Green chutney
Sugar
Boondi

Steps to follow

For making paani 

  • In a big bowl add jaljeera powder, sweet chutney, green chutney as per your taste.
  • Add cumin powder, garam masala, chaat masala, red chilli powder and sugar(optional).
  • Add boondi to the water and keep it in the fridge for an hour or more.

For making chaat

  • Take a paani poori or golgappa and make a hole into it with a spoon.
  • Now, add chopped onions and potatoes into it carefully. Remember do it carefully so that the poori doesn’t break.
  • Add a little green chutney and sweet chutney as per your taste.
  • Fill 4 to 6 pooris this way to serve in a plate.
  • Fill the pooris with water and sprinkle some chaat masala and garam masala for making them spicy.
  • You can replace the water with curd to get another scrumptious type of chaat.

Raj Kachori Chaat

Raj kachori or king sized kachori is such a mouth-watering dish and contains such heavenly flavours that one cannot resist the temptation of eating this chaat. Moreover, it is loaded with sprouts and curd which makes it a healthy snack anyway.

For making kachori

Wheat flour- 1/2 cup
Rava- 1/4 cup
Besan – 2 tbsp
Salt
Chilli powder
Pepper powder
Baking soda

For chaat stuffing

Boiled beans
Boiled potato
boiled chana
boiled moong
Boiled sprouts
Sev chana
Chaat masala
Green chutney
Sweet chutney
Whisked curd
Black salt
Cumin powder- roasted
Red chilli powder

Steps to follow

For making raj kachori 

  • Take rava and flour and mix them in a bowl
  • Add salt, chilli powder, cumin powder and a pinch of baking soda.
  • Drizzle 1 tbsp oil into the mixture
  • Make a dough of moderate texture and keep it aside for 30 minutes.
  • Now, heat a pan and pour oil into it.
  • Make a kachori (a big one) and slid the kachori in hot oil.
  • Gently nudge it with spoon so that it gets puffed with like a poori.
  • Fry till the base gets golden brown.
  • Similarly, make all kachoris and remember to keep the flame on medium.

Making the delectable chaat

  • Assemble all the sprouts together in a bowl.
  • Break the top crust carefully and add the ingredients.
  • Add chaat masala, garam masala, and all other masalas you want to add into it.
  • Now, add Whisked curd, sweet chutney, green chutney and sev poori to increase the flavour.
  • Relish the delectable raj kachori with family.

Aalu Tikki Chaat

Aalu Tikki garnished with onions and green and sweet chutney can warm your soul even on a rainy day. Make Aalu tikki chaat at home and relish the flavour of this amazing chaat right after it gets down the tava.

Ingredients –

Potatoes – 5 (Boiled)
Chilli powder
Curd
Sev chana
Chaat masala
Coriander powder
Green chutney
Sweet chutney
Whisked curd
Black salt
Cumin powder- roasted
Oil
Arrowroot powder

Steps to follow

  • Mash the potatoes and add chaat masala, garam masala, arrowroot flour to it.
  • Also add a pinch of salt to the potatoes when they get cooled.
  • Now, take the potatoes in your palms and make small patties.
  • Heat oil in a shallow frying vessel and drop aalu tikki into it.Flip the tikki when it becomes golden brown.
  • Once both the sides becomes golden brown keep the tikki over kitchen towel.
  • Similarly, make more tikkis.
  • Now, after making tikkis assemble them in a plate.
  • Sprinkle chaat masala, garam masala, chili powder and other masalas to enrich the taste.
  • Pour sweet chutney, green chutney and curd over the tikkis and serve immediately.

Dahi Papdi Chaat

The soft melt in the mouth of potatoes, the crispiness of papdi and the delectable taste of whisked curd can make anyone go gaga over this relishing papdi chaat.

Ingredients

Curd
Papdi
sprouted moong – 1/2 cup
Onions – 1/4 cup (finely chopped)
Tomatoes- 1/4 cup (finely chopped)
Chopped corriander leaves
Garam masala
Green chutney
Red chutney
Aalu bhijia

Steps to follow

  • Crumble the potatoes and mix them with moong daal.
  • Add salt, chaat masala, garam masala, and other spices for flavour.
  • Now, arrange papdi in a plate and finely spread the crumbled potato mixture over them.
  • After evenly arranging the papdi add finely chopped tomatoes and onions on top.
  • Add sweet chuntey, green chuney and curd.
  • Sprinkle some aalu bhujia for garnishing at the end.

Samosa Chaat

Samosas
Chickpeas – 3 cups ( boiled)
Oil
Onions – 1/4 cup (chopped)
Curd
Green chutney
Sweet chutney
Red chilli powder
Coriander powder – 1/2 tbsp
Dry mango powder – 1/4 tbsp
Black salt
Lemon juice

  • Take a big bowl and add chickpeas into it.
  • Now, add chopped onions, lemon juice, dry mango powder, red chilli powder, coriander powder, black salt,
  • chaat masala, garam masala and mix them well.
  • In a plate, break the samosa into four to five pieces and add the mixture over it.
  • Now, pour sweet chutney, green chutney over it as per your taste.
  • Don’t forget to add curd just after the chutney to enjoy the chaat.

Sev Poori Chaat

Ingredients

Potatoes – 3 (boiled)
Onions – 1/4 cup (chopped)
Curd
Green chutney
Sweet chutney
Sev poori
Aalu bhijia
Red chilli powder
Coriander powder – 1/2 tbsp
Dry mango powder
Black salt
Lemon juice

Steps to follow

  • In a bowl take the sev poori and add chaat masala, chopped onions, lemon juice, boiled potatoes, dry mango powder and mix them well.
  • Now add chilli powder, green chutney, sweet chutney to the mixture.
  • Empty the mixture in a plate and add curd and chutneys to enjoy this exquisite chaat.

Masala Corn Chaat

Boiled corn kernels with an assortment of several spices and other ingredients provide a revitalising rush of flavours in the mouth. This Masala Corn Chaat is a true blockbuster.

Sweet corn kernels – 2 cups (boiled)
Butter
Onions – 1/4 cup (chopped)
Tomatoes – 1/4 cup (chopped)
Lemon juice
Chaat masala
Oregano
Chopped coriander
Black salt

  • Take the boiled corn kernels and grease them with butter.
  • After greasing them steam them for a while and add the seasonings including oregano, chaat masala, and lemon juice.

Steps to follow

  • Mix all chopped fruits together, add condiments and spices.
  • Add cream over it for enriching taste.
  • Sprinkle chaat masala if needed.
  • Serve chilled.

Sookhi Bhel Chaat

Sookhi Bhel chaat is a quick recipe for dealing with sudden hunger pangs. This chaat has to be crispy so we don’t use curd or flavouring chutneys to it rather we prepare dry chutney to maintain its crispiness.

Ingredients

Murmure
Sev papdi
Aalu bhujia
Mint leaves
Coriander leaves
Roasted chana
Ginger
Green chilli
Lemon juice
Red chilli powder

Steps to follow

  • To make dry chutney, in a blender add mint leaves, coriander leaves, green chillies, chana, and ginger.
  • Blend them together and do not add water.
  • Take murmura, aalu bhujia and sev papdi in a bowl.
  • Sprinkle red chilli powder, chaat masala, and garam masala on the mixture.
  • Pour the dry chutney in the same bowl and mix everything together.
  • Sprinkle lemon juice over it and give a toss till the mixture gets mixed well.
