There is a lot of variety in non-vegetarian food. In the southern part of India, most non-veg dishes are cooked in coconut oil which is beneficial for health.\u00a0<\/span><span data-preserver-spaces=\"true\">The combination of rice and non-vegetarian dishes is very delicious.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">\u00a0<\/span><strong><span data-preserver-spaces=\"true\">Let\u2019s make layered rice with spicy Mughal mutton:<\/span><\/strong><\/p>\n<p><strong><span data-preserver-spaces=\"true\">Serves:\u00a0<\/span><\/strong><span data-preserver-spaces=\"true\">6<\/span><\/p>\n<p><strong><span data-preserver-spaces=\"true\">Ingredients:<\/span><\/strong><\/p>\n<ul>\n<li><span data-preserver-spaces=\"true\">3\/4 Kg Mutton Leg Pieces\u00a0<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">1 cup Vegetable Oil<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">1\/4 Kg Peeled Potatoes\u00a0<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">3 Large Sliced Onions<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">1 \u00bd Teaspoons salt<\/span><\/li>\n<\/ul>\n<p><strong><span data-preserver-spaces=\"true\">For Marinade:<\/span><\/strong><\/p>\n<ul>\n<li><span data-preserver-spaces=\"true\">20gms Ginger<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">16 Flakes Garlic<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">6 Green Chillies<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">1 Chopped Tomato\u00a0<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">6 Dry Plums<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">6 Almonds<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">1 Tablespoon Salt<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">1 \u00bd Tablespoons Red Chilli powder<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Two tablespoons coriander leaves<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Two tablespoons mint leaves<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Two tablespoons garam masala<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">One tablespoon cumin powder<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">1 cup curd<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Large pinch saffron dissolved in 1 tablespoon hot water<\/span><\/li>\n<\/ul>\n<p><strong><span data-preserver-spaces=\"true\">For Rice:<\/span><\/strong><\/p>\n<ul>\n<li><span data-preserver-spaces=\"true\">6 cups + 5 tablespoons water<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">One tablespoon salt<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">2 \u00bd cups basmati rice<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">1\/2 cup + 1 tablespoon ghee<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">1\/2 cup Milk<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">2 Green Cardamoms<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">1\/4 teaspoon caraway seeds<\/span><\/li>\n<\/ul>\n<p><span data-preserver-spaces=\"true\">Grind together ginger, garlic and chillies into a paste.\u00a0<\/span><\/p>\n<p><strong><span data-preserver-spaces=\"true\">Recipe:<\/span><\/strong><\/p>\n<ol>\n<li><span data-preserver-spaces=\"true\">Rub the ground paste into the meat. Add all the ingredients Marinade. Mix well and keep aside for four hours or overnight in the refrigerator.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">In a large frying pan, heat oil for about five minutes lightly fries the potatoes. Remove and add potatoes to the marinated meat and mix well.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Divide the onions into two batches. In the remaining oil in the pan, fry each batch with 3\/4 teaspoon salt till onions get golden brown and crispy.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">\u00a0Remove the onions in a strainer to drain off excess oil. Crumple the fried onions and mix with marinated meat.<\/span><\/li>\n<li><strong><span data-preserver-spaces=\"true\">For the layered rice,\u00a0<\/span><\/strong><span data-preserver-spaces=\"true\">pour 6 cups of water into the cooker. Bring to a boil on high heat. Add salt and rice and stir once.\u00a0<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Close cooker. Bring to full pressure on high heat. Remove the cooker immediately from heat. Reduce pressure by placing it in a basin of cold water for about 2 minutes.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Open the cooker and transfer the rice to a colander, and drain.\u00a0<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Heat 7 tablespoons of ghee in the cooker for about two minutes. Add meat along with the marinade and mix well; now add the remaining five tablespoons of water.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Remove the cooker from heat. Tilt it and shift meat to one side of it. Add rice to the other side. Sprinkle milk on rice.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">In a pan, heat the remaining ghee for about one minute. Remove the pan from heat. Now add cardamoms and caraway seeds to hot ghee and pour evenly over rice.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Close the cooker. Bring to full pressure on high heat. Reduce heat and cook for 20 minutes.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">\u00a0Remove the cooker from heat and allow it to cool naturally.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">\u00a0Open the cooker, Transfer rice into a serving dish and top it with the spicy mutton.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Serve hot with onion salad, Mint Chutney or curd.<\/span><\/li>\n<\/ol>\n<p><span data-preserver-spaces=\"true\">\u00a0<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>A large number of north Indians loves Non-vegetarian food as it is loaded with numerous spices and flavours.
