If not washed perfectly, the dish spoils and radiates a foul smell. Therefore, it is important to clean every piece in hot or warm water three times and again in cold water. Take time cleaning the parts and make sure every piece is cleaned correctly.

Step 2: Boil the cleaned goat intentions in a pressure cooker for 3 -5 whistles. Don’t add the water to boil as water is already present in goat intestines.

Step 3: Besides Garam Masala, adding Boti Masala adds extra flavours to the dish. To prepare the masala, grind two medium-sized chopped onions, 1 tsp shah jeera, six cardamoms, a 2 tbsp -cumin powder, coriander seeds, coconut powder, six cloves, 7- garlic cloves, and two cinnamon sticks of small size. Next, grind into a paste by adding the required amount of water.

Step 4: Remove the boiled goat intestines from the cooker and keep them aside. Take a pan and heat it on medium flame.

Step 5: Once the pan gets heated, add oil(required quantity) and add 1 tsp cumin seeds, two chopped onions, four green chillies, and curry leaves. Mix well

Step 6: Once the onions turn brown, add ginger garlic paste, 1 tsp turmeric powder, and mix,x well. After 2 min, once the raw smell is gone, add in boiled Goat Intestines and cool for 5-10minutes.

Step 7: Add in chilli powder, garam masala (as required), salt ( as needed) and make both pastes into the pan and stir well. Now, put a lid and let it cook for ten more minutes on low flame.

Step 8: When then floats above, add courier leaves and cut the stove off. Let it rest for 3 minutes, and Mutton Boti fry is ready to serve for at least 4-5 people.

Lamb gizzards are the main ingredient in the Mutton Boti Fry dish.
