Like any mother, she too was concerned about what I would eat and specially how I would start my long days. The concern was absolutely genuine as the street food may not be clean and healthy. She asked me to start the hot\u00a0days of South Indian summer with a nice and hot plate of<em> Idli Sambhar<\/em> from any of the numerous\u00a0Darshini restaurants. <em>Idli<\/em>, being cooked in boiling water, is clean, and it was the perfectly healthy breakfast to start the day. I just fell in love with this yummy breakfast option and to date have it at least a couple of times a week, though now I make this at home. I&#8217;ll share this recipe so you too can have a perfect start to your days with <em>Idli Sambha<\/em>r.<\/p>\n<h2>Ingredients needed for\u00a0Idli Sambhar<\/h2>\n<p><strong>(serves 6)<\/strong><\/p>\n<p>For<em> Idli:<\/em><\/p>\n<ul>\n<li><em>Idli<\/em> rice &#8211; 2 cups<\/li>\n<li><em>Urd dal<\/em> &#8211; 1\/2 cup<\/li>\n<li><em>Poha<\/em> &#8211; 1\/4 cup<\/li>\n<li>Salt to taste<\/li>\n<\/ul>\n<p>For <em>Sambhar:<\/em><\/p>\n<ul>\n<li><em>Arhar ki dal<\/em> &#8211; 1\/2 cup<\/li>\n<li>Turmeric powder &#8211; 1\/2 tsp<\/li>\n<li>Salt to taste<\/li>\n<li>Oil &#8211; 2 tsp<\/li>\n<li>Mustard seeds &#8211; 1\/2 tsp<\/li>\n<li>Curry leaves &#8211; 10-12<\/li>\n<li>Onion &#8211; 1 cup (chopped)<\/li>\n<li>Tomato &#8211; 1 cup (chopped)<\/li>\n<li>Sambhar masala &#8211; 2 tbsp<\/li>\n<li>Brinjal &#8211; 1 (chopped)<\/li>\n<li>Tamarind pulp &#8211; 2 tbsp<\/li>\n<\/ul>\n<h2>How to make Idli Sambhar<\/h2>\n<p>For <em>Idli:<\/em><\/p>\n<ul>\n<li>Wash and soak rice <em>poha<\/em> and<em> urd dal<\/em> separately for 4-5 hours.<\/li>\n<li>Drain and blend in a blender together with salt and <em>poha<\/em> till smooth.<\/li>\n<li>Transfer the batter in a big vessel and cover and keep to ferment for 6-8 hours.<\/li>\n<li>Grease the<em> idli<\/em> molds and pour the batter in each mold.<\/li>\n<li>Steam the<em> idlies<\/em> for 15-20 minutes, till done.<\/li>\n<\/ul>\n<p>For <em>Sambhar<\/em>:<\/p>\n<ul>\n<li>Wash the <em>dal<\/em>.<\/li>\n<li>Add it in a pressure cooker with salt and turmeric powder.<\/li>\n<li>Cook till done.<\/li>\n<li>Add oil in a pan.<\/li>\n<li>When the oil is hot, add mustard seeds and curry leaves.<\/li>\n<li>Add onion and fry for 2 minutes.<\/li>\n<li>Add tomatoes<em>, brinjal, <\/em>and<em> sambhar masala.<\/em><\/li>\n<li>Add half a cup of water and cook till <em>brinjal<\/em> is soft.<\/li>\n<li>Add the cooked<em> dal<\/em> and tamarind pulp.<\/li>\n<li>Cook for another 4-5 minutes.<\/li>\n<li>Serve hot with<em> idlies<\/em>.<\/li>\n<\/ul>\n<p><strong>Related Recipes:<\/strong><\/p>\n<p><a href=\"http:\/\/www.mapsofindia.com\/my-india\/travel\/top-five-south-indian-restaurants-in-delhi\">Top Five South Indian Restaurants in Delhi<\/a><br \/>\n<a href=\"http:\/\/www.mapsofindia.com\/my-india\/food\/south-indian\">South Indian Foods<\/a><br \/>\n<a href=\"http:\/\/www.mapsofindia.com\/my-india\/food\/sambhar\">Sambhar Recipe<\/a><br \/>\n<a href=\"http:\/\/www.mapsofindia.com\/my-india\/food\/masala-dosa-the-national-dish\">Masala Dosa \u2013 The National Dish<\/a><br \/>\n<a href=\"http:\/\/www.mapsofindia.com\/my-india\/food\/adai-dosa\">Adai Dosa<\/a><br \/>\n<a href=\"http:\/\/www.mapsofindia.com\/my-india\/food\/coconut-rice\">Coconut Rice<\/a><br \/>\n<a href=\"http:\/\/www.mapsofindia.com\/my-india\/food\/schezwan-idli\">Schezwan Idli<\/a><br \/>\n<a href=\"http:\/\/www.mapsofindia.com\/my-india\/food\/fried-idli\">Fried Idli<\/a><br \/>\n<a href=\"http:\/\/www.mapsofindia.com\/my-india\/food\/vada\">Vada Recipe<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>When I was visiting South India a couple of decades back with my college friends, I had the perfect advice from my mother and I follow it till date.
