Rogan Josh is a dish which probably originated in Persia and was brought to India during the Mughal period. Mutton Rogan Josh has a thin, red-coloured gravy with lots of oil on the top. The red color comes from the Kashmiri red chilies and roots of the plant called<em>\u00a0Rattanjot<\/em>. Mutton Rogan Josh can be had with rice or enjoyed with some lovely <i>naan<\/i> bread. The dish can be made with or without garlic and onion, and for today\u2019s creation I didn&#8217;t use these, although I did use yogurt or <i>dahi<\/i>. It&#8217;s best to enjoy this dish piping hot.<\/p>\n<h2>Ingredients needed for\u00a0Mutton Rogan Josh<\/h2>\n<p><strong>(serves 4)<\/strong><\/p>\n<ul>\n<li>Mustard oil &#8211; 6 tbsp<\/li>\n<li><em>Badi Elaichi\u00a0<\/em>&#8211; 3-4<\/li>\n<li><em>Laung<\/em>\u00a0&#8211; 4-5<\/li>\n<li><em>Kali mirch<\/em>\u00a0&#8211; 4-5<\/li>\n<li>Whole red chili &#8211; 4-5<\/li>\n<li><em>Zeera<\/em>\u00a0&#8211; 1 tsp<\/li>\n<li><em>Heeng<\/em>\u00a0&#8211; 1\/4 tsp<\/li>\n<li>Mutton &#8211; 500 g<\/li>\n<li>Saffron (1 pinch dipped in hot milk) &#8211; 2 tbsp<\/li>\n<li><em>Dahi<\/em>\u00a0&#8211; 1 cup<\/li>\n<li>Kashmiri red chili &#8211; 1-1\/2 tbsp<\/li>\n<li><em>Saunf<\/em>\u00a0&#8211; 3 tsp<\/li>\n<li>Dry ginger powder &#8211; 1 tsp<\/li>\n<li><em>Dhania<\/em>\u00a0powder &#8211; 1 tbsp<\/li>\n<li>Salt to taste<\/li>\n<li>Ratanjot &#8211;\u00a0small piece heated with a little oil<\/li>\n<\/ul>\n<h2><strong>How to make Mutton Rogan Josh\u00a0<\/strong><\/h2>\n<ul>\n<li>Heat oil in a pan.<\/li>\n<li>Add the whole spices and fry for a few seconds.<\/li>\n<li>Add whole red chili, <em>zeera<\/em> and <em>heeng<\/em> and let it splatter.<\/li>\n<li>Add the mutton and cook on high flame till it turns slightly brown (about 5-6 min).<\/li>\n<li>Add 1\/2 cup water and cook for about 10 min on low flame.<\/li>\n<li>Add\u00a0all ground spices along with saffron milk and mix well.<\/li>\n<li>Whisk and add <em>dahi<\/em> and cook for a about a min.<\/li>\n<li>Add a cup of water and cook the mutton till done (about 1-2 hours).<\/li>\n<li>Pour the <em>rattanjot-<\/em>infused oil.<\/li>\n<li>Serve hot.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Here is another lovely creation for the mutton lovers!
