Fortunately, numerous delicious and refreshing cold soup recipes may satisfy your appetite while helping you battle the heat.<\/span><\/p>\n<h2><strong>Chilled rasam consomme<\/strong><\/h2>\n<h3><strong>\u00a0Ingredients<\/strong><\/h3>\n<ul>\n<li><span data-preserver-spaces=\"true\">Tamarind<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Coriander<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Black pepper<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Cumin<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Guntur dried red chillies<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Garlic<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Curry leaves<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Tomatoes<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Water<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Gingelly oil<\/span><\/li>\n<\/ul>\n<h3><strong><span data-preserver-spaces=\"true\">Method<\/span><\/strong><\/h3>\n<ol>\n<li><span data-preserver-spaces=\"true\">Put the tamarind in around 250 ml of water to soak.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Heat one teaspoon of oil in a pan. When you can smell the aroma, add coriander seeds, cumin, black peppercorns, and red chilies. The hues shouldn&#8217;t shift. Please turn off the heat and allow it to cool.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Add the curry leaves and garlic cloves to the pan and roast them until the raw aroma disappears (for about 1 minute).<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Grind the tomatoes coarsely in a mixer, then set them aside.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Take the cooled spices, garlic, and curry leaves in a separate container and coarsely crush them in a mixer. Set aside.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Add the tomato and spices to a large, heavy-bottomed pot.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">While waiting, firmly press the soaked tamarind to extract the water, then throw away the solids. Fill the container with this water.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Add some salt and around 2 litres of water. Once it begins to bubble, allow the mixture to come to a boil before taking it off the heat. Set apart for cooling.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Once it has reached room temperature, decant it into a tall container and place it in the refrigerator, untouched, to allow the flavours to fully meld. You will notice that the spices have separated into layers after a few hours, with the clearest liquid at the top.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">With great care, decant the liquid layer. To make sure the liquid is as clear as possible, strain it. Serve cold.<\/span><\/li>\n<\/ol>\n<h2><strong>Mexican Avocado Soup<\/strong><\/h2>\n<h3><strong><span data-preserver-spaces=\"true\">Ingredients<\/span><\/strong><\/h3>\n<ul>\n<li><span data-preserver-spaces=\"true\">large ripe avocado<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">cucumber<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">spring onions<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">a few sprigs of fresh coriander<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">organic vegetable stock\/stock cube (chilled)<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">plain yoghurt<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">mild fresh green chilly<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">fresh red chilli<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">lime<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">a handful of micro garlic chives<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Tabasco sauce<\/span><\/li>\n<\/ul>\n<h3><strong><span data-preserver-spaces=\"true\">Method\u00a0<\/span><\/strong><\/h3>\n<ol>\n<li><span data-preserver-spaces=\"true\">The avocado should be peeled, stoned, and chopped. The cucumber should be peeled and the seeds removed, saving a 3-centimetre piece for later.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Roughly chop the coriander leaves after trimming and chopping the spring onions.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Use a blender to puree the avocado, cucumber, spring onions, coriander, stock, yoghurt, and green chilli.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Add a generous teaspoon of sea salt, black pepper, and a hefty squeeze of lime juice and Tabasco, and then cover and chill in the refrigerator.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Finely slice the red chilli, peel, deseed, and chop the reserved cucumber slice.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">After the soup has chilled, serve it in small dishes and garnish it with tortilla chips, cucumber chunks, red chilli, and garlic chives.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">If preferred, put a drizzle of avocado oil on top.<\/span><\/li>\n<\/ol>\n<h2><strong>Tomato Gazpacho<\/strong><\/h2>\n<h3><strong><span data-preserver-spaces=\"true\">Ingredients<\/span><\/strong><\/h3>\n<ul>\n<li><span data-preserver-spaces=\"true\">Red tomatoes<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Red bell pepper<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Celery<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Cucumber<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Red onion<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Peeled garlic<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Iceberg lettuce<\/span><\/li>\n<\/ul>\n<h3><strong><span data-preserver-spaces=\"true\">Method<\/span><\/strong><\/h3>\n<ol>\n<li><span data-preserver-spaces=\"true\">Roughly chop the tomatoes.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Remove the seeds, chop, and wash the red bell peppers.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Peel and chop the onions into small pieces.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Cut the cucumber into small bits after peeling.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Crisp lettuce iceberg.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Add the garlic to the bowl of the mixer along with the remaining ingredients.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">With a mixer, properly combine 7.<\/span><\/li>\n<li><span data-preserver-spaces=\"true\">Move into a dish.
