While I was visiting the <em>kumaon<\/em> hills in Uttarakhand, I got to taste a very unique dish made of <em>dahi<\/em> called Pahadi Kheere Ka Raita. This <em>raita<\/em> had a very distinct tangy taste which is given out by mustard seeds which are allowed to release their flavors for about half an hour in the <em>raita<\/em> before serving. It is also important that the water from the cucumber (<em>kheera<\/em>) is removed before mixing with <em>dahi<\/em> to make a thick <em>raita<\/em>. The <em>raita<\/em> is nicely decorated with powdered cumin seeds (<em>zeera<\/em>) and red chili powder and garnished with fresh coriander seeds to make it look more appealing. It goes well with most Indian curries in lunch or dinner and is a great use of a very simple <em>dahi<\/em>. Let&#8217;s see how to make Pahadi Kheere Ka Raita with this recipe.<\/p>\n<p><strong>All you need is (serves 4)<\/strong><\/p>\n<p><em>Dahi<\/em> &#8211; 500 gms<\/p>\n<p>Grated cucumber &#8211; 1 cup<\/p>\n<p>Mustard seeds &#8211; 2 tsp<\/p>\n<p>Green chili &#8211; 1 to 2 (cut in small pieces)<\/p>\n<p>Salt to taste<\/p>\n<p>Red chili powder &#8211; 1 tsp<\/p>\n<p><em>Zeera<\/em> powder &#8211; 1 tsp<\/p>\n<p>Fresh coriander leaves for garnishing<\/p>\n<h2>Pahadi Kheere Ka Raita Recipe<\/h2>\n<p>Preparation time: 10 min.<\/p>\n<p>Cooking time: 10 min.<\/p>\n<p>Whip the <em>dahi<\/em> to make it smooth.<\/p>\n<p>Drain the water from the grated cucumber and mix it well with the whipped<em> dahi<\/em>.<\/p>\n<p>Use a mortar and pestle to crush the mustard seeds coarsely.<\/p>\n<p>Add green chili, crushed mustard seeds and salt and mix well.<\/p>\n<p>Leave the <em>raita<\/em> for half an hour.<\/p>\n<p>Decorate the <em>raita<\/em> with red chili powder and <em>zeera<\/em> powder.<\/p>\n<p>Garnish with fresh coriander leaves and serve.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; India has so many different states and so many variation to dishes come out of these states.
