A lot of you who would have traveled to this city would agree on this point, its cuisine has been carried forward through number of generations from the old <em>Mughal<\/em> period. I picked up one of my favorite recipes from this city called Lucknowi Chicken which I share with you today. The taste of dish is enhanced through <em>kewra<\/em> essence and rose water and it tastes delicious with any Indian bread like <em>naan<\/em> or <em>tandoori roti<\/em>. Let&#8217;s see the Lucknowi Chicken Recipe and enjoy a historical taste in the new year!<\/p>\n<h2><strong>Ingredients<\/strong><\/h2>\n<p><strong>(serves 4)<\/strong><\/p>\n<ul>\n<li>Curry cut chicken &#8211; 800 gms<\/li>\n<li>Onion &#8211; 2 cup (cut in small pieces)<\/li>\n<li>Garlic &#8211; 10 cloves<\/li>\n<li>Ginger &#8211; 1 1\/2 inch piece<\/li>\n<li>Tomatoes &#8211; 1\/2 cup (cut in small pieces)<\/li>\n<li>Oil &#8211; 4 tbsp<\/li>\n<li>Salt to taste<\/li>\n<li>Coriander powder &#8211; 2 tsp<\/li>\n<li>Turmeric powder &#8211; 1 tsp<\/li>\n<li>Red chili powder &#8211; 1 tsp<\/li>\n<li><em>Kewra<\/em> essence &#8211; about 5 drops<\/li>\n<li>Rose water &#8211; 2 tsp<\/li>\n<li>Fresh <em>dhania<\/em> leaves for garnishing<\/li>\n<\/ul>\n<h2>Method of Preparation<\/h2>\n<p>Preparation time: 15 min.<\/p>\n<p>Cooking time: 30 min.<\/p>\n<ul>\n<li>Use a mortar and pestle to shred the garlic cloves and ginger piece. Keep aside.<\/li>\n<li>Heat oil in a pan and fry onions till light golden brown.<\/li>\n<li>Add garlic and ginger and saute for 2-3 min.<\/li>\n<li>Add tomatoes and saute until soft.<\/li>\n<li>Add all dry <em>masala<\/em> and fry for 4-5 min. (Use little water as needed)<\/li>\n<li>Add chicken and fry on low flame with a cover for 10-12 min till the chicken is soft.<\/li>\n<li>Add <em>kewra<\/em> essence and rose water.<\/li>\n<li>Garnish with fresh <em>dhania<\/em> leaves.<\/li>\n<li>Serve hot.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I did part of my studies from Lucknow, the capital of UP, and one of the best things I liked about this wonderful city was its cuisine.
