So this time I decided to make something that would take me on a nostalgic tour. Using Kashmiri red chillies,\u00a0<em>saunf<\/em> and <em>dahi<\/em>, I made Kashmiri Dum Aaloo. This dish uses baby potatoes in a thick gravy and goes well with <em>roti<\/em> or <em>paratha<\/em>. It was absolutely delicious, and thoroughly enjoyed by the whole family. Bookmark this Kashmiri Dum Aaloo Recipe and enjoy another gem from our north-most state.<\/p>\n<h2>Ingredients needed for\u00a0Kashmiri Dum Aaloo<\/h2>\n<p><strong>(serves 4)<\/strong><\/p>\n<ul>\n<li>Baby potatoes: 500 gms<\/li>\n<li>Oil: 1\/4 cup and for frying<\/li>\n<li><em>Badi elaichi<\/em>:\u00a02<\/li>\n<li><em>Choti elaichi<\/em>:\u00a03 to 4<\/li>\n<li><em>Kali mirch<\/em>:\u00a05 to 6<\/li>\n<li><em>Laung<\/em>:\u00a03 to 4<\/li>\n<li>Onion: 1 cup (cut in small pieces)<\/li>\n<li><em>Dahi<\/em>:\u00a01 cup<\/li>\n<li>Kashmiri red chillies: 1-1\/2 tsp<\/li>\n<li>Dry ginger powder: 1 tsp<\/li>\n<li>Garam masala: 1 tsp<\/li>\n<li>Salt to taste<\/li>\n<li>Turmeric powder: 1 tsp<\/li>\n<li><em>Saunf<\/em> powder: 1 tsp<\/li>\n<li>Fresh coriander for garnishing.<\/li>\n<\/ul>\n<h2 style=\"text-align: left;\"><strong>How to make Kashmiri Dum Aaloo<\/strong><\/h2>\n<p style=\"text-align: left;\"><em>Preparation time: 10 min.<\/em><\/p>\n<p style=\"text-align: left;\"><em>Cooking time: 25 min.<\/em><\/p>\n<ul>\n<li>Boil the baby potatoes lightly so they are soft. Make sure not to boil them fully.<\/li>\n<li>Peel off the potatoes, prick and fry in oil until golden brown. Keep aside.<\/li>\n<li>Heat 1\/4 cup oil in a <em>kadhai<\/em>, add all whole spices fry for 30 sec.<\/li>\n<li>Add onion and fry till golden brown.<\/li>\n<li>Whisk the <em>dahi<\/em> and add.<\/li>\n<li>Add all dry masala, fry for about 2 min.<\/li>\n<li>Add potatoes with a cup of water, cover it tightly and cook on low flame for 10 min.<\/li>\n<li>Garnish with fresh coriander and serve.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Winters always remind me of Kashmir for two reasons: for the beautiful snow, and the scrumptious food!
