Well, why not? I was getting in a mood of tasting a different style of <em>achaar<\/em> when this recipe from my mom came to my mind. Nowadays the winter seasonal vegetables are available all over, you can easily get <em>gajar, mooli<\/em> and <em>gobhi<\/em>. Using these three vegetables I made Gajar Mooli Gobhi Achaar and the taste just came out awesome. I&#8217;m now more loving my meals because this is wonderful <em>achaar<\/em>. You also should give it a try and use this Gajar Mooli Gobhi Achaar Recipe. I&#8217;m sure you would love it too.<\/p>\n<p><strong>All you need is (makes about 1 kg <em>achaar<\/em>)<\/strong><\/p>\n<p><em>Gajar<\/em> &#8211; 300 gms (cut in round shape)<\/p>\n<p><em>Mooli<\/em> &#8211; 300 gms (cut in round shape)<\/p>\n<p><em>Gobhi<\/em> &#8211; 300 gms (cut in small pieces)<\/p>\n<p>Salt &#8211; 60 gms<\/p>\n<p>Mustard seeds &#8211; 2 tsp<\/p>\n<p><em>Methi<\/em> seeds &#8211; 2 tsp<\/p>\n<p><em>Saunf<\/em> &#8211; 2 tsp<\/p>\n<p>Turmeric powder &#8211; 2 tsp<\/p>\n<p>Red chili powder &#8211; 1 tsp<\/p>\n<p>Mustard oil &#8211; 250 ml<\/p>\n<h2>Gajar Mooli Gobhi Achaar Recipe<\/h2>\n<p>Preparation time: 20 min.<\/p>\n<p>Cooking time: 15 min.<\/p>\n<p>Boil water in a pan, add the vegetables and boil them for few minutes. Strain and dry them on a cloth for 2-3 hours.<\/p>\n<p>Boil the mustard oil and let it cool. Keep aside.<\/p>\n<p>Dry roast the <em>methi<\/em> and <em>saunf<\/em> seeds over a tava.<\/p>\n<p>Coarsely grind mustard, <em>methi<\/em> and <em>saunf<\/em> seeds.<\/p>\n<p>Mix all dry <em>masala<\/em> with the seeds and vegetables.<\/p>\n<p>Mix with oil in a glass container, cover and keep in sun for 3-4 days.<\/p>\n<p>Serve with your main course meals as needed.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Have you ever used seasonal vegetables apart from their regular use in curry&#8217;s and salads.
