Generally Ras Malai is made as flat discs or at times round balls in a milk curry, the round balls shaped are also known as <em>jhilmil<\/em>\u00a0or <em>chenna<\/em> in certain towns and cities of India. Today I added <em>kesar (<\/em>saffron strands<em>)<\/em> to the preparation and made Kesar Rasmalai. Few ingredients like<em> kesar<\/em> give both a great taste and color to the dish, so my dish came out with a nice red tinge and with a unique taste. Just like me no one in the family could resist this wonderful dessert. I&#8217;m sure you and your family would love this this too, so enjoy with this Kesar Rasmalai Recipe.<\/p>\n<p><strong>All you need is (serves 6-8)<\/strong><\/p>\n<p><em>For Chenna Balls<\/em><\/p>\n<p><em>Chenna<\/em> &#8211; 200 gms<\/p>\n<p><em>Maida<\/em> &#8211; 1 tsp<\/p>\n<p>Cardamom powder &#8211; 1\/4 tsp<\/p>\n<p><em>For Sugar Syrup<\/em><\/p>\n<p>Sugar &#8211; 1 &amp; 1\/2 cup<\/p>\n<p>Water &#8211; 2 &amp; 1\/2 cup<\/p>\n<p>Milk &#8211; 1\/2 cup<\/p>\n<p><em>For Kesar Milk<\/em><\/p>\n<p>Full cream milk &#8211; 1 l<\/p>\n<p>Cardamom powder &#8211; 1\/4 tsp<\/p>\n<p>Sugar &#8211; 1\/2 cup<\/p>\n<p>Kesar &#8211; 15-20 strands (soaked in 1 tsp milk)<\/p>\n<p><em>For Garnishing<\/em><\/p>\n<p>Pistachios &amp; Almond slivers<\/p>\n<h2>Kesar Rasmalai Recipe<\/h2>\n<p>Preparation time: 10 min.<\/p>\n<p>Cooking time: 45 min.<\/p>\n<p><em>For Chenna Balls<\/em><\/p>\n<p>Mix <em>chenna, maida<\/em> and cardamom powder and knead softly with palm heels.<\/p>\n<p>Divide equally to form small balls, make sure there are no cracks on the surface.<\/p>\n<p>Dust a plate with little <em>maida<\/em> to keep the balls.<\/p>\n<p><em>For Sugar Syrup<\/em><\/p>\n<p>Boil milk, water and sugar on low heat. Increase the heat when it comes to a boil and let sugar dissolve.<\/p>\n<p>Remove any dirt from the top.<\/p>\n<p>Add <em>chenna<\/em> balls and cook for about 15 min on low heat till done.<\/p>\n<p>Cool the balls for about 2-3 hours.<\/p>\n<p><em>For Kesar Milk<\/em><\/p>\n<p>Boil the milk till it reduces and thickens.<\/p>\n<p>Add all other <em>kesar milk<\/em> ingredients and let it boil for 2-3 more min. Let it cool.<\/p>\n<p><em>For Kesar Rasmalai<\/em><\/p>\n<p>Squeeze the <em>chenna<\/em> balls and add them to <em>kesar<\/em> milk and refrigerate for 2-3 hours.<\/p>\n<p>Garnish with almond and pistachios.<\/p>\n<p>Serve.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; It is hard to resist some of the sweets and one among them is Rasmalai.
