Although I cannot imagine how much hard work it was, I&#8217;m sure it used to give a nice aroma to the food. To try and get a coal fire aroma in my dinner today I made Dhuan Goshth. This mutton recipe gets its great flavor from the burnt coal. I heated a piece of coal on the gas stove, put it over an aluminium foil inside the dish, pour some <em>desi ghee<\/em> over to get the smoke (<em>dhuan<\/em>) and close the lid. The flavors just seeped in to the main dish almost immediately and it tasted absolutely great with some home made <em>roti<\/em>. You should also try and make it on your own following this Dhuan Goshth Recipe.<\/p>\n<p>All you need is (serves 4)<\/p>\n<p>Oil &#8211; 4 tbsp<\/p>\n<p>Red dry chili &#8211; 4<\/p>\n<p>Onion &#8211; 1 cup<\/p>\n<p>Ginger garlic paste &#8211; 2 tsp<\/p>\n<p>Mutton &#8211; 600 gms<\/p>\n<p><em>Dahi<\/em> &#8211; 1 cup<\/p>\n<p>Salt to taste<\/p>\n<p>Red chili powder &#8211; 1\/2 tsp<\/p>\n<p>Turmeric powder &#8211; 1\/2 tsp<\/p>\n<p><em>Dhania<\/em> powder &#8211; 1 tsp<\/p>\n<p><em>Garam masala<\/em> powder &#8211; 1\/2 tsp<\/p>\n<p>Coal piece<\/p>\n<p><em>Desi ghee<\/em> &#8211; 1 tsp<\/p>\n<p>Coriander leaves for garnishing<\/p>\n<h2>Dhuan Goshth Recipe<\/h2>\n<p>Preparation time: 10 min.<\/p>\n<p>Cooking time: 30 min.<\/p>\n<p>Heat in a pressure cooker, add dry red chili and onions and saute till golden brown.<\/p>\n<p>Add ginger garlic paste and saute for a min.<\/p>\n<p>Add mutton and cook till the color changes.<\/p>\n<p>Add <em>dahi<\/em> and all dry <em>masala<\/em>, little water and cook till done (about 4 whistles).<\/p>\n<p>Heat the coal piece over the gas till it becomes red on all sides.<\/p>\n<p>Place aluminium foil over the mutton, and burning coal over it, pour the <em>desi ghee<\/em> and close the lid for couple of min.<\/p>\n<p>Garnish with coriander leaves.<\/p>\n<p>Serve hot.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Traditionally the cooking in India used to be done on coal fired stoves.
