The regulars are potato, onion, chili, bread and more, however the state of West Bengal also uses <em>baingan<\/em> or <em>brinjal<\/em>\u00a0or eggplant to make a very similar dish. This dish is called Beguni or Baingani or Eggplant Fritters (Baingan Pakora). It is made with slices of <em>baingan<\/em> coated with a batter of gram flour or <em>besan<\/em> and deep fried in oil. I added a pinch of baking powder to make them more crispy. These fritters would go well as an evening snack with or without chutney. Serve them with a hot cup of tea and they would make the evening more special. Lets see in this Beguni &#8211; Eggplant Fritters Recipe on how to make it.<\/p>\n<p><strong>All you need is (serves 4)<\/strong><\/p>\n<p><em>Baingan<\/em> &#8211; 2 medium<\/p>\n<p><em>Besan<\/em> &#8211; 2 cup<\/p>\n<p>Salt &#8211; 1 tsp<\/p>\n<p>Red chili powder &#8211; 1\/2 tsp<\/p>\n<p>Turmeric powder &#8211; 1\/4 tsp<\/p>\n<p><em>Ajwain<\/em> &#8211; 1\/2 tsp<\/p>\n<p><em>Chaat masala<\/em> &#8211; 2 tsp<\/p>\n<p>Baking powder &#8211; 1 pinch<\/p>\n<p>Oil for frying<\/p>\n<h2>Beguni &#8211; Eggplant Fritters Recipe<\/h2>\n<p>Preparation time: 10 min.<\/p>\n<p>Cooking time: 15 min.<\/p>\n<p>Wash and cut the <em>baingan<\/em> into circular slices.<\/p>\n<p>In a bowl mix <em>besan<\/em> with salt, red chili powder, turmeric powder, <em>ajwain, chaat masala,<\/em> baking powder, add water little by little with constant stirring to make a smooth batter.<\/p>\n<p>Heat oil in a <em>kadhai<\/em>, dip the <em>baingan<\/em> slices in the batter and deep fry on medium heat till golden brown.<\/p>\n<p>Drain excess oil on a kitchen tissue paper.<\/p>\n<p>Sprinkle some <em>chaat masala<\/em>.<\/p>\n<p>Serve hot with green <em>chutney<\/em>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>We all have pakoras every now and then, what all can we make into pakoras?
