The food scene in India rocks, unlike any other part of the world. Many amongst us wouldn&#8217;t have had mutter wali poori (Pooris made with a stuffing of green peas) and for those who have had, we are sure they wouldn&#8217;t have had enough.\u00a0 Traditionally a recipe from Uttar Pradesh, hare mutter ki poori has gradually gained popularity in other states as well and is served as a breakfast or a snack item. This is how our in-house chef went about preparing these yesterday, inspired by a recipe by Tarla Dalal.<\/p>\n<h2>Hare Mutter Ki Poori Recipe<\/h2>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/www.mapsofindia.com\/my-india\/india\/hare-mutter-ki-poori\/attachment\/stuffed-kachouri-preparation-step2-300x201\" rel=\"attachment wp-att-30703\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-30703 size-full\" src=\"https:\/\/www.mapsofindia.com\/ci-moi-images\/my-india\/2013\/03\/stuffed-kachouri-preparation-step2-300x201.jpg\" alt=\"stuffed-kachouri-preparation-step2-300x201\" width=\"300\" height=\"201\" \/><\/a><\/p>\n<p><strong>For the Dough<\/strong><\/p>\n<p>Put together wheat flour (atta), curd (dahi), baking powder, refined oil and salt to make dough, kneading it with warm water. Once the dough is ready, leave it under a wet cloth for a few minutes.<\/p>\n<p><a href=\"http:\/\/www.mapsofindia.com\/my-india\/india\/hare-mutter-ki-poori\/attachment\/stuffed-kachouri-preparation-step1-300x201\" rel=\"attachment wp-att-30700\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-30700 size-full\" src=\"https:\/\/www.mapsofindia.com\/ci-moi-images\/my-india\/2013\/03\/stuffed-kachouri-preparation-step1-300x201.jpg\" alt=\"stuffed-kachouri-preparation-step1-300x201\" width=\"300\" height=\"201\" \/><\/a><\/p>\n<p><strong>For the Stuffing<\/strong><\/p>\n<p><strong> Step One<\/strong>: Add green peas and green chillies to a blender and make a smooth paste, without adding any water to it.<\/p>\n<p><strong>Step Two<\/strong>: Heat oil and add cumin seeds to it until they begin to splutter.<\/p>\n<p><strong>Step Three<\/strong>: Add the green peas mixture, lemon juice, chaat masala and salt and cook for a few minutes. Sprinkle a little flour to this mixture and cook for a few minutes until the mixture becomes dry.<\/p>\n<p><a href=\"http:\/\/www.mapsofindia.com\/my-india\/india\/hare-mutter-ki-poori\/attachment\/stuffed-kachouri-preparation-step3-300x271\" rel=\"attachment wp-att-30701\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-30701 size-full\" src=\"https:\/\/www.mapsofindia.com\/ci-moi-images\/my-india\/2013\/03\/stuffed-kachouri-preparation-step3-300x271.jpg\" alt=\"stuffed-kachouri-preparation-step3-300x271\" width=\"300\" height=\"271\" \/><\/a><\/p>\n<p><strong>Making the Pooris<\/strong><\/p>\n<p><strong> Step One<\/strong>: Roll out a small portion of the dough into a small circle, put a teaspoon full of the peas mixture in the middle of this and close it.<\/p>\n<p><strong>Step Two<\/strong>: Roll this out and repeat the same with the other balls of dough.<\/p>\n<p><strong>Step Three<\/strong>: Deep fry in refined oil over medium flame so that the puris cook evenly on the insides as well.
