The dish is made with potato patties covered with a white peas curry called <em>ragda<\/em> and then garnished with usual <em>chaat<\/em> stuff. When I&#8217;d it for the first time, I just could not resist another plate. You too would love this preparation, although it takes some time to make this <em>chaat<\/em>, the effort is worth it. So when you have some time on hand and in a mood for something different try this\u00a0Ragda Patties Recipe.<\/p>\n<p><strong>All you need is (serves 4)<\/strong><\/p>\n<p><em>For Patties<\/em><\/p>\n<p>Potatoes &#8211; 2 cup (boiled &amp; mashed)<\/p>\n<p>Cornflour &#8211; 3\u00a0tsp<\/p>\n<p>Salt &#8211; 1 tsp<\/p>\n<p>Oil to fry<\/p>\n<p><em>For Ragda<\/em><\/p>\n<p>White peas &#8211; 2 cup (soaked overnight)<\/p>\n<p>Oil &#8211; 1 tbsp<\/p>\n<p>Onion &#8211; 1 cup (chopped)<\/p>\n<p>Ginger garlic paste &#8211; 1 tsp<\/p>\n<p>Green chili &#8211; 1 tsp (chopped)<\/p>\n<p>Tomato &#8211; 1 cup (chopped)<\/p>\n<p>Red chili powder &#8211; 1 tsp<\/p>\n<p>Turmeric powder &#8211; 1 tsp<\/p>\n<p>Salt &#8211; 2 tsp<\/p>\n<p><em>For Garnishing<\/em><\/p>\n<p>Mint coriander chutney &#8211; 4 tsp<\/p>\n<p>Curd &#8211; 4 tsp (whisked)<\/p>\n<p><em>Saunth<\/em> &#8211; 4 tsp<\/p>\n<p>Onion &#8211; 1\/2 cup (finely chopped)<\/p>\n<p>Fresh coriander &#8211; 1\/4 cup (finely chopped)<\/p>\n<p><em>Zeera<\/em>\u00a0powder &#8211; 1 tsp<\/p>\n<p><em>Chaat masala<\/em> &#8211; 1 tsp<\/p>\n<p><em>Sev<\/em> &#8211; 2 tsp<\/p>\n<h2>Ragda Patties Recipe<\/h2>\n<p>Preparation time: 15 min.<\/p>\n<p>Cooking time: 45 min.<\/p>\n<p>Mix all patty ingredients in a bowl, divide in equal parts and make patty shapes.<\/p>\n<p>Heat oil on\u00a0a flat <em>tava<\/em> and shallow fry until golden brown from both sides.<\/p>\n<p><em>For Ragda<\/em><\/p>\n<p>Boil the peas in pressure cooker with 4 cup water for 7 to 8 whistles. Strain and keep peas and water aside.<\/p>\n<p>Heat oil in a pan, saute onion till golden brown.<\/p>\n<p>Add ginger garlic paste and green chili and saute for another 3-4 min.<\/p>\n<p>Add tomatoes and saute till the oil leaves the sides.<\/p>\n<p>Add dry <em>masala<\/em> for <em>ragda<\/em> and cook for 3-4 min.<\/p>\n<p>Add peas and cooked water and boil for 3-4 min.<\/p>\n<p><em>For Plating<\/em><\/p>\n<p>Lay the patties in the serving bowl and pour <em>ragda<\/em> over it.<\/p>\n<p>Garnish with curd, <em>saunth,<\/em> mint coriander chutney, fresh coriander, onions, <em>zeera<\/em> powder, <em>chaat masala<\/em> and <em>sev<\/em>.<\/p>\n<p>Serve hot.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>If you are looking for an anytime snack, Ragda Patties is an awesome choice.
