Probably this is because they are more fresh, direct from the farms or may be just a perception. Whatever it is, I still look forward to the seasonal vegetables and come summer we get varieties like <em>lauki, tinda, bhindi<\/em> and more. I used the <em>lauki<\/em> from the market today to make Lauki Ke Kofte as everyone at my home looks forward to this dish once in a while. The dish came out very appetizing and tasty, served with some hot made made roti, it was finished in no time. So why don&#8217;t you also give it a try with this Lauki Ke Kofte Recipe.<\/p>\n<p><strong>All you need is (serves 4)<\/strong><\/p>\n<p><em>For Kofte<\/em><\/p>\n<p><em>Lauki<\/em> &#8211; 500 gms<\/p>\n<p><em>Besan<\/em> &#8211; 100 gms<\/p>\n<p>Green chili &#8211; 1 tsp (chopped)<\/p>\n<p>Ginger &#8211; 1 tsp (grated)<\/p>\n<p>Salt &#8211; 1 tsp<\/p>\n<p>Red chili powder &#8211; 1\/2 tsp<\/p>\n<p><em>Garam masala<\/em> &#8211; 1\/2 tsp<\/p>\n<p>Oil for frying<\/p>\n<p><em>For Curry<\/em><\/p>\n<p>Oil &#8211; 2 tbsp<\/p>\n<p>Bay leaves &#8211; 2<\/p>\n<p>Zeera &#8211; 1 tsp<\/p>\n<p>Onion &#8211; 1 cup (chopped)<\/p>\n<p>Ginger &#8211; 1 tsp (grated)<\/p>\n<p>Garlic &#8211; 1 tsp (grated)<\/p>\n<p>Green chili &#8211; 1 tsp (chopped)<\/p>\n<p>Tomato &#8211; 1 cup (chopped)<\/p>\n<p>Coriander powder &#8211; 2 tsp<\/p>\n<p>Red chili powder &#8211; 1\/2 tsp<\/p>\n<p>Turmeric powder &#8211; 1\/2 tsp<\/p>\n<p><em>Garam masala<\/em> &#8211; 1 tsp<\/p>\n<p>Salt &#8211; 1 tsp<\/p>\n<p>Fresh <em>dhania<\/em> to garnish<\/p>\n<h2>Lauki Ke Kofte Recipe<\/h2>\n<p>Preparation time: 20 min.<\/p>\n<p>Cooking time: 30 min.<\/p>\n<p>Mix all <em>kofte<\/em>\u00a0ingredients in a bowl, divide in equal parts and make lemon sized balls.<\/p>\n<p>Heat oil in a <em>kadhai<\/em> and deep fry the <em>kofte<\/em> till golden brown. Keep aside.<\/p>\n<p>Heat oil for curry in a pan, add bay leaves and <em>zeera<\/em> and allow it to crackle.<\/p>\n<p>Add onion and saute till golden brown.<\/p>\n<p>Add ginger, garlic and green chili and saute for 2-3 min.<\/p>\n<p>Add tomato and saute till the oil leaves the sides.<\/p>\n<p>Add all dry <em>masala<\/em> and saute for 5-6 min adding water as necessary.<\/p>\n<p>Add 2 cup water to make curry.<\/p>\n<p>Add <em>kofte<\/em> and bring the curry to a boil, add <em>garam masala<\/em> and then cook for 3-4 min.<\/p>\n<p>Garnish with fresh <em>dhania<\/em>.<\/p>\n<p>Serve hot<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; Although most of the vegetables are now available through the year, their taste is just so different when they are in season.
