Coconut gives good amount of dietary fiber and other benefits to the heart. Coconut and its derivatives are used in many different ways all over India. For its culinary use, the coconut oil is used in South India for cooking, along with <em>chutneys<\/em>, and curries. Since rice is also one of the staples in India, I combined these two to make Coconut Rice. This variety of rice is generally used in South India; however, it has now been adopted all over the country. The rice is slightly different to its usual boiled variety and gives a great taste just by itself. You can also serve it along with some <em>sambhar<\/em> or <em>dal<\/em>. In this Coconut Rice Recipe I show you how to make it easily and quickly so you can enjoy it when you like.<\/p>\n<p><strong>All you need is (serves 4)<\/strong><\/p>\n<p>Coconut oil &#8211; 2 tbsp<\/p>\n<p>Mustard seeds &#8211; 1\/2 tsp<\/p>\n<p><em>Urad dal<\/em> &#8211; 1\/2 tsp<\/p>\n<p><em>Chana dal<\/em> &#8211; 1\/2 tsp<\/p>\n<p>Cashew nut &#8211; 5 to 6<\/p>\n<p>Dry red chilies &#8211; 3 to 4<\/p>\n<p>Curry leaves &#8211; 1 sprig<\/p>\n<p>Fresh grated coconut &#8211; 1 cup<\/p>\n<p>Rice &#8211; 1 cup<\/p>\n<p>Salt to taste<\/p>\n<p><strong>Coconut Rice Recipe<\/strong><\/p>\n<p>Preparation time: 10 min.<\/p>\n<p>Cooking time: 30 min.<\/p>\n<ul>\n<li>Boil the rice with water till done. Keep aside.<\/li>\n<li>Heat oil in a <em>kadhai<\/em>, add mustard seeds, <em>urad dal, chana dal<\/em> and fry till brown.<\/li>\n<li>Add dry red chilies, cashew nuts and curry leaves and fry for a few seconds.<\/li>\n<li>Add grated coconut and fry till slightly brown.<\/li>\n<li>Add salt and rice, and cook for about 2-3 min.<\/li>\n<li>Serve hot.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; India is one of the largest producers of coconut, with most of its states closer to the sea sporting coconut trees all over.
