Coming from the northern part of India, egg curry was a regular on the\u00a0 menu every few days at our home. The curry was made in a fairly similar way by parching the onions, adding <em>masala<\/em> and tomatoes, etc. However since I started to travel across India, I found that the same curry is cooked and consumed in various Indian states with slight variations, each of them bringing some local flavors. I&#8217;ve started to love these variations as it helps me to create a different taste every time I cook the dish and I keep getting praises from my family and guests on being innovative. I&#8217;m sure you too can create these slight variations to your every day cooking and surprise your family and guests. Here I&#8217;ve made egg curry with coconut milk, a variation which comes from the southern part of India and it gives a lovely flavor, color and appeal. I&#8217;m sure you would love this recipe.<\/p>\n<h2>Ingredients Needed for\u00a0Egg Curry with Coconut Milk<\/h2>\n<ul>\n<li>Eggs- 6 (hard boiled and cut into half)<\/li>\n<li>Oil -4 tbsp<\/li>\n<li>Mustard seeds -1\/2 tsp<\/li>\n<li>Curry leaves &#8211; a sprig<\/li>\n<li>Dried red chilies &#8211; 3-4<\/li>\n<li>Onion-2 cups (thinly sliced)<\/li>\n<li>Ginger garlic paste- 1 tsp<\/li>\n<li>Tomato-1 cup (chopped)<\/li>\n<li>Coriander powder- 2tsp<\/li>\n<li>Red chili powder-1\/2 tsp<\/li>\n<li>Turmeric powder-1\/2 tsp<\/li>\n<li>Kitchen king<em> masala<\/em>-1\/2 tsp<\/li>\n<li><em>Garam masala<\/em>-1 tsp<\/li>\n<li>Salt to taste<\/li>\n<li>Coconut milk -1\/2 cup<\/li>\n<\/ul>\n<h2>How to make Egg Curry with Coconut Milk<\/h2>\n<ul>\n<li>Heat oil in a heavy-bottom pan.<\/li>\n<li>When the oil is hot, add mustard seeds.<\/li>\n<li>When the seeds starts splattering, add curry leaves and dried red chilies.<\/li>\n<li>Add onions and fry till they turn translucent.<\/li>\n<li>Add ginger garlic paste and fry for 3-4 minutes.<\/li>\n<li>Add tomatoes and fry for 4-5 minutes.<\/li>\n<li>Add coriander powder, red chili powder, turmeric powder, kitchen king <em>masala<\/em>, <em>garam masala<\/em> and salt.<\/li>\n<li>Fry till the oil comes out.<\/li>\n<li>Add two cups of water and cover the pan and simmer on medium heat for 10-12 minutes.<\/li>\n<li>Add coconut milk and halved eggs.<\/li>\n<li>Cook for a minute.<\/li>\n<li>Garnish with fresh coriander.<\/li>\n<li>Serve hot with<em> roti<\/em> or rice.<\/li>\n<\/ul>\n<p><strong>Related Recipes :<\/strong><\/p>\n<p><a href=\"http:\/\/www.mapsofindia.com\/my-india\/food\/basic-anda-curry\">Egg Curry Recipe<\/a><\/p>\n<p><a href=\"http:\/\/www.mapsofindia.com\/my-india\/food\/egg-roll\">Egg Roll<\/a><\/p>\n<p><a href=\"http:\/\/www.mapsofindia.com\/my-india\/food\/masala-egg-curry\">Masala Egg Curry Recipe<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Eggs are a good source of proteins and essential amino acids.
