I must admit that this brilliant-colored chutney is really mouth-watering in which the taste of every ingredient is well-preserved. Spices add to the flavor and aroma and it tastes very similar to the red chutney served with <em>dosa<\/em>. You can serve it as a spicy dip with potato chips or with salad or anything you like. Also you can make a <em>chappati<\/em> roll by using this tomato chutney. For this, first stir fry the vegetables and add salt. Make very thin chapattis. Spread spicy tomato chutney on to the <em>chappati<\/em>. Create a layer of stir fried vegetables on the top, roll it and your <em>chappatti<\/em> roll is ready.<\/p>\n<h2><strong>Ingredients for Spicy Tomato Chutney<\/strong>:<\/h2>\n<ul>\n<li>Tomato \u2013 5 kg<\/li>\n<li>Mustard oil \u2013 250 g<\/li>\n<li>Garlic paste\u2013 250 g<\/li>\n<li>Ginger paste \u2013 250 g<\/li>\n<li>Green chilies \u2013 250 g (cut into two halves lengthwise)<\/li>\n<li>Red chili powder \u2013 1 spoon (depends upon your taste)<\/li>\n<li><em>Garam masala<\/em> \u2013 1 spoon<\/li>\n<li><em>Methi<\/em> (Fenugreek) &#8211; 1 spoon<\/li>\n<li><em>Jeera<\/em> (Cumin seeds) &#8211; 1 spoon<\/li>\n<li>Mustard seed &#8211; 1 spoon<\/li>\n<li>Powdered <em>rayi<\/em> \u2013 250 g<\/li>\n<li>Vinegar \u2013 250 g<\/li>\n<li>Curry or <em>Kari patta<\/em> (Curry leaves) \u2013 8-10 stems with leaves<\/li>\n<li>Salt to taste<\/li>\n<\/ul>\n<h2>How to make Spicy Tomato Chutney<\/h2>\n<ul>\n<li>Boil the tomatoes for a min or two. Drain off the water and keep the tomatoes under cool running water. This will help in removing the peel of the tomatoes. Now grind these to form a paste or if you like the pieces of tomatoes in chutney then cut the tomatoes into small pieces.<\/li>\n<li>Roast the cumin seeds on a hot<em> tawa<\/em> to make a powder (not very smooth)<\/li>\n<li>Heat the mustard oil in a heavy-base sauce pan.<\/li>\n<li>Add mustard seeds to it. Let these pop.<\/li>\n<li>Add garlic and ginger paste,<em> rayi<\/em> powder, red chillies, curry <em>patta<\/em>, and <em>methi<\/em>. Keep stirring regularly as it should not burn. Add green chilies.<\/li>\n<li>Once it leaves the oil add tomato paste to it.<\/li>\n<li>Let it thickened. Add cumin powder.<\/li>\n<li>Add <em>garam masala,<\/em> salt to taste and vinegar to it and keep frying till oil gets separated from chutney similar to a <em>tadka<\/em>.<\/li>\n<li>Remove from flame and let it cool at room temperature.<\/li>\n<li>Take a glass jar and transfer the spicy tomato chutney.<\/li>\n<\/ul>\n<p><strong>Tips<\/strong><\/p>\n<ul>\n<li>Do not buy round tomatoes for making this chutney. Buy only red pulpy tomatoes.<\/li>\n<li>Glass jar should be completely dry.
