Southerners are more comfortable with<em> sambhar<\/em>, while it is called <em>pappu<\/em> in Telegu, <em>Gujarati dal<\/em> is famous in Gujarat, while<em> maa ki dal<\/em> in Punjab. I&#8217;ve hardly seen any Indian restaurant not serving <em>dal makhani<\/em> and <em>dal tadka<\/em> as part of their menu and it is definitely part of most buffets. The pulses or <em>dal<\/em> come in various forms like <em>tur<\/em>, <em>masoor, chana, moong, urad<\/em>.<\/p>\n<p><em>Dal<\/em> is the most common source of protein in India, specially for people who are vegetarian. <em>Dal<\/em> can be had with <em>roti<\/em> or rice as per preference. I try and cook <em>dal<\/em> in different variations through the week. Sometimes I cook it just by itself and sometimes with some vegetables added to it. Most commonly I add <em>palak<\/em> to my <em>dal<\/em> as an excellent green supplement. My <em>palak moong dal<\/em> is liked a lot in my family and in particular by my son.
