It is eaten in most parts of India. It, however, is more prevalent in the northern part of India in states of Rajasthan, Gujarat, Punjab and Uttar Pradesh. In these states, <em>kadhi<\/em> is made in various forms and generally goes very well with white rice. It is a good substitute for regular <em>dal<\/em> eaten with rice. <em>Kadhi<\/em> can be made plain or with vegetables specially lady finger\/ okra (<em>bhindi<\/em>). In some states even sugar or jaggery (<em>gud<\/em>) is added. However, I like <em>kadhi<\/em> with <em>besan\u00a0pakoras<\/em>\u00a0served with <em>basmati<\/em> rice. <em>Kadhi pakora<\/em> with its traditional <em>tadka<\/em> of mustard seeds, curry leaves and dry red chilis in <em>desi ghee<\/em> tastes great and is a regular Sunday lunch feature in many homes. So, go ahead and try this <em>kadhi pakora<\/em> recipe.<\/p>\n<h2>Ingredients needed for\u00a0Kadhi Pakora<\/h2>\n<ul>\n<li><em>Besan<\/em> &#8211; 1\/2 cup<\/li>\n<li>Sour curd &#8211; 1\/2 cup<\/li>\n<li>Vegetable oil &#8211; 2 tbsp<\/li>\n<li>Mustard seeds &#8211; 1\/2 tsp<\/li>\n<li><em>Methi<\/em> seeds &#8211; 1\/2 tsp<\/li>\n<li>Cumin seeds -1\/2 tsp<\/li>\n<li><em>Heeng<\/em> &#8211; 1\/4 tsp<\/li>\n<li>Curry leaves &#8211; 2 sprigs<\/li>\n<li>Salt to taste<\/li>\n<li>Turmeric powder &#8211; 1\/4 tsp<\/li>\n<li><em>Ghee<\/em> &#8211; 3 tbsp<\/li>\n<li>Dry red chili &#8211; 3-4<\/li>\n<li>Red chili powder &#8211; 1\/2 tsp<\/li>\n<\/ul>\n<h2>How to make Kadhi Pakora<\/h2>\n<ul>\n<li>Whisk curd and <em>besan<\/em> together to make a smooth paste.<\/li>\n<li>Add 4 cups of water to it.<\/li>\n<li>Heat oil in a heavy-bottom pan.<\/li>\n<li>When the oil is hot, add <em>methi<\/em> seeds.<\/li>\n<li>When the seeds starts splattering, add cumin seeds, mustard seeds, <em>heeng<\/em> and curry leaves.<\/li>\n<li>Add the curd and <em>besan<\/em> to the pan.<\/li>\n<li>Add salt and turmeric powder.<\/li>\n<li>Bring the mixture to a boil.<\/li>\n<li>Simmer the heat and let the <em>kadhi<\/em> cook till thickened and <em>besan<\/em> is cooked ( approximately 40-50 minutes ).<\/li>\n<li>In another pan, add <em>ghee<\/em>.<\/li>\n<li>When the <em>ghee<\/em> is hot, add dry red chilies and fry for 30 seconds.<\/li>\n<li>Remove from heat and add red chili powder.<\/li>\n<li>Add this <em>ghee<\/em> to the cooked <em>kadhi<\/em>.<\/li>\n<li>Serve hot with plain rice.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Kadhi is the name for a dish made from chickpeas flour (besan) mixed with sour yogurt (khatta dahi) or buttermilk.
