Various different lentils can be used to create <em>dal tadka<\/em>. However, I like to do it with <em>toor<\/em>\/ <em>arhar<\/em> <em>dal<\/em>. It gets its name from the <em>tadka<\/em> or <em>chaunk<\/em> that gives the finishing touch to the <em>dal<\/em> changing its appearance and aroma in a matter of seconds. The tempering noise which comes during a <em>tadka<\/em> is just an experience in itself and I would assume the <em>chaunk<\/em> probably got its name with the noise the <em>tadka<\/em> makes in contact with the <em>dal<\/em>. The <em>tadka<\/em> can be made using any of the oils. However, nothing can really replace\u00a0<em>desi ghee<\/em> here. Garlic cloves (<em>lasan<\/em>), onions, tomatoes, curry leaves, dry chilis, etc\u00a0can all be used as desired in the <em>tadka<\/em> which definitely contains cumin seeds (j<em>eera<\/em>) or mustard seeds with<em> heeng<\/em>\u00a0added to the oil\/ <em>ghee<\/em> and allowed to simmer on slow flame for a few seconds before giving a\u00a0final addition of red chili powder and then mixing with the prepared <em>dal.<\/em> I just love ordering this dish in restaurants, so it is amazing to create it on your own. It goes well with <em>roti<\/em> or rice. Here is the recipe.<\/p>\n<h2>Ingredients needed for\u00a0Dal Tadka<\/h2>\n<p><em>Toor dal<\/em> &#8211; 1\/2 cup<\/p>\n<p><em>Dhuli moong da<\/em>l -1\/4 cup<\/p>\n<p>Water &#8211; 4 cup<\/p>\n<p>Salt to taste<\/p>\n<p>Turmeric powder &#8211; 1\/4 tsp<\/p>\n<p><em>Ghee<\/em> &#8211; 3 tbsp<\/p>\n<p>Mustard seeds &#8211; 1\/2 tsp<\/p>\n<p>Cumin seeds &#8211; 1\/2 tsp<\/p>\n<p><em>Heeng<\/em> &#8211; 1\/4 tsp<\/p>\n<p>Curry leaves &#8211; 1 sprig<\/p>\n<p>Garlic &#8211; 3-4 cloves (chopped)<\/p>\n<p>Onion &#8211; 1 and 1\/2 cup (chopped)<\/p>\n<p>Tomato &#8211; 1\/2 cup (chopped)<\/p>\n<p>Green chili &#8211; 2 (slit into halves)<\/p>\n<p>Fresh coriander for garnishing<\/p>\n<h2>How to make Dal Tadka<\/h2>\n<p>Wash the <em>dal<\/em> and put it in a pressure cooker.<\/p>\n<p>Add water, salt and turmeric powder<\/p>\n<p>Pressure cook till <em>dal<\/em> is soft and done.<\/p>\n<p>Heat 2 tbsp <em>ghee<\/em> in a heavy-bottom pan.<\/p>\n<p>When the <em>ghee<\/em> is hot, add mustard seeds, cumin seeds and <em>heeng<\/em>.<\/p>\n<p>When the seeds starts splattering, add 1 cup onion, green chili, garlic and curry leaves.<\/p>\n<p>Fry till onions are browned.<\/p>\n<p>Add tomato and fry for 2 minutes.<\/p>\n<p>Add red chili powder and add this <em>tadka<\/em> to the cooked <em>dal<\/em>.<\/p>\n<p>Add lemon juice and mix.<\/p>\n<p>Heat the remaining <em>ghee<\/em> in a pan and add the remaining onion.<\/p>\n<p>Fry till onions are browned.<\/p>\n<p>Sprinkle these fried onions on top of the <em>dal<\/em>.<\/p>\n<p>Garnish with fresh coriander.<\/p>\n<p>Serve hot with plain rice.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Dal tadka is another one of the common dishes found in most of the north Indian restaurants in India and abroad.
