A special powder is made by grinding various spices in a definite proportion and that is the main base for a delicious <em>sambhar<\/em>. It is more common in the south Indian states and every state has its own version. Some have a spicy <em>sambhar<\/em> and some have a little sweetness to it. It is an accompaniment with a lot of dishes like <em>idli, vada, dosa<\/em> and rice. Lot of vegetables like brinjal, ladyfinger, carrot, radish and others are added which makes it a very healthy dish. This is a traditional recipe which I got from one of my south Indian friend and have been making it since a long time. So go ahead and enjoy this hot and spicy <em>sambhar<\/em>. Here is the recipe.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li><em>Arhar ki dal<\/em> &#8211; 1\/2 cup<\/li>\n<li>Salt to taste<\/li>\n<li>Turmeric powder &#8211; 1\/4 tsp<\/li>\n<li>Oil &#8211; 2 tbsp<\/li>\n<li>Curry leaves &#8211; 1 sprig<\/li>\n<li>Mustard seeds &#8211; 1\/2 tsp<\/li>\n<li>Cumin seeds &#8211; 1\/2 tsp<\/li>\n<li><em>Heeng<\/em> -1\/4 tsp<\/li>\n<li>Onion &#8211; 1 cup (thinly sliced)<\/li>\n<li>Tomato &#8211; 1 cup (chopped)<\/li>\n<li><em>Sambhar<\/em> powder &#8211; \u00a02 tbsp<\/li>\n<li>Carrot &#8211; 1 (cut into cubes)<\/li>\n<li>Radish &#8211; \u00a0(cut into cubes)<\/li>\n<li>Tamarind paste &#8211; 1 tbsp<\/li>\n<\/ul>\n<h2>How to make Sambhar<\/h2>\n<ul>\n<li>Wash and cook <em>arhar ki dal<\/em> with 3 cups of water, salt and turmeric powder.<\/li>\n<li>In a heavy-bottom pan, add oil.<\/li>\n<li>When the oil is hot, add mustard seeds, cumin seeds and <em>heeng<\/em>.<\/li>\n<li>Add curry leaves and fry for 30 seconds.<\/li>\n<li>Add onions and fry for 2 minutes.<\/li>\n<li>Add tomatoes, <em>sambhar masala<\/em>, carrots and radish.<\/li>\n<li>Fry for 2 minutes.<\/li>\n<li>Add this<em> masala<\/em> to the cooked <em>dal<\/em>.<\/li>\n<li>Cook again till vegetables are cooked.<\/li>\n<li>Add tamarind paste.<\/li>\n<li>Serve hot.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Sambhar is a spicy Indian lentil soup made with various vegetables and spices.
