An Indian meal is generally not complete without a pickle or an <em>achaar, <\/em>be it\u00a0<em>parathas<\/em>\u00a0or rice, curries or\u00a0<em>pulaos<\/em>\u00a0and so on. The\u00a0<em>achaars<\/em>\u00a0are now easily available commercially from various known cuisines. There is no buffet spread I have ever seen without <em>achaar<\/em>. We always recommend having <em>achaar<\/em> as a side with a lot of our recipes. However, there is no substitution to an <em>achaar<\/em> made at home. Most of us would remember our grand mothers and mothers making various types of <em>achaars<\/em> and putting them out in the sun to induce the right taste and long life. The recipes of these <em>achaars<\/em> have been passed on from generations and its easy to make out differences in <em>achaars<\/em> made in various Indian homes. Here, I give out one such recipe of stuffed red chili pickle, which you can follow to make your own home-made <em>mirch ka achaar<\/em>.<\/p>\n<h2>Ingredients needed for\u00a0Stuffed Red Chili Pickle<\/h2>\n<p>Red chili &#8211; 3 kg<\/p>\n<p>Salt &#8211; 220 gm<\/p>\n<p><em>Saunf<\/em> &#8211; 80 gm (coarsely ground)<\/p>\n<p><em>Methi<\/em> &#8211; 125 gm (coarsely ground)<\/p>\n<p>Red chilli powder &#8211; 100 gm<\/p>\n<p>Turmeric powder &#8211; 100 gm<\/p>\n<p>Mustard seeds &#8211; 100 gm (coarsely ground)<\/p>\n<p><em>Kalaungi<\/em> &#8211; 40gm<\/p>\n<p><em>Amchoor<\/em> powder &#8211; 400 gm<\/p>\n<p>Oil &#8211; 1 lt<\/p>\n<h2>How to make Stuffed Red Chili Pickle<\/h2>\n<p>Mix all the dry <em>masalas<\/em> well.<\/p>\n<p>Make long slits in the red chilies.<\/p>\n<p>Fill the <em>masalas<\/em> inside the red chilies.<\/p>\n<p>Put the stuffed chilies in a sterilized bottle preferably made of glass.<\/p>\n<p>Boil the oil and let it cool.<\/p>\n<p>Pour the oil over the stuffed chilies in the bottle.<\/p>\n<p>Keep the bottle out in the bright sun for around a week and taste the <em>achaar<\/em>.<\/p>\n<p>When done, move the <em>achaar<\/em> inside and enjoy it with your regular meals.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pickles or achaars have a special significance in Indian cuisine.
