A lot of times, I have white rice left over after a party or even a regular family meal. Fried rice is one amazing creation which can enthuse a \u00a0lot of flavors to the rice and making it look, feel and taste like a newly created rice dish. I tried adding a few more south Indian flavors to it to make south Indian fried rice. An addition of <em>sambhar<\/em> powder, <em>chana dal<\/em>, <em>urad dal<\/em> along with other ingredients makes it taste really unique. It can be easily had only with plain curd or some <em>raita<\/em> and salad on the side and is a proper meal in itself. You could even try and add some scrambled eggs or shredded chicken to make it egg- or chicken-flavored south Indian fried rice. Here is a simple recipe to try in your own kitchen.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>Cooked rice &#8211; 2 cups<\/li>\n<li>Oil &#8211; 2 tsp<\/li>\n<li>Curry leaves &#8211; a sprig<\/li>\n<li>Mustard seeds &#8211; 1\/2 tsp<\/li>\n<li><em>Chana dal<\/em> &#8211; 1\/2 tsp<\/li>\n<li><em>Urad dal<\/em> &#8211; 1\/2 tsp<\/li>\n<li>Onion &#8211; 1 (chopped)<\/li>\n<li>Tomato &#8211; 2 (thinly sliced)<\/li>\n<li>Green chili &#8211; 1 (chopped)<\/li>\n<li><em>Sambhar masala<\/em> &#8211; 2 tsp<\/li>\n<li>Salt to taste<\/li>\n<li>Turmeric powder &#8211; 1\/2 tsp<\/li>\n<\/ul>\n<h2>How to make South Indian Fried Rice<\/h2>\n<ul>\n<li>Heat oil in a pan.<\/li>\n<li>When the oil is hot, add curry leaves, mustard seeds, <em>chana dal<\/em> and <em>urad dal<\/em>.<\/li>\n<li>Cook for 30 seconds.<\/li>\n<li>Add onion and fry for a minute.<\/li>\n<li>Add tomato, <em>sambhar masala<\/em>, turmeric powder, green chili and salt.<\/li>\n<li>Fry for 2 minutes.<\/li>\n<li>Add the cooked rice.<\/li>\n<li>Mix well.<\/li>\n<li>Serve hot.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>There are always times when you need something quick for your meal and are not in a mood to spend a lot of time in the kitchen, sometimes even with left overs.
