The wishes are mostly fulfilled with the availability of so many sweets to choose from. The\u00a0<em>mithai<\/em> shops are ever bustling with people queuing up and there are special counters set up during festive days to cater the rush. With so many variations and combinations, its easy to over indulge at times. Here I give a slight twist to the regular <em>khoya barfi<\/em> and made this <em>barfi<\/em> with <em>lauki<\/em> or bottle gourd. <em>Lauki Ki Barfi<\/em> is fairly easy to prepare and just delectable in taste. Line it up with shining edible silver foil and amaze your family and guests with this irresistible dessert. <em>Lauki Ki Barfi<\/em> would go well on festive days and its even good for fasting people. So indulge yourself with this simple recipe.<\/p>\n<h2>Ingredients needed for\u00a0Lauki Ki Barfi<\/h2>\n<p>Full cream milk &#8211; 1 liter<\/p>\n<p>Lauki &#8211; 2 cups ( grated )<\/p>\n<p>Sugar -1\\2 cup<\/p>\n<p>Khoya &#8211; 200 gm<\/p>\n<p>Cardamom powder &#8211; 1 tsp<\/p>\n<p>Almond and pistachio slivers for garnishing<\/p>\n<p>Silver foil \u00a0( optional )<\/p>\n<h2>How to make Lauki Ki Barfi<\/h2>\n<p>Heat milk in a heavy bottom pan.<\/p>\n<p>When the milk comes to a boil, add the grated lauki.<\/p>\n<p>Cook till the milk has reduced.<\/p>\n<p>Add sugar and khoya and cook till the mixture is dry.<\/p>\n<p>Add the cardamom powder and mix well.<\/p>\n<p>Grease a thali with ghee.<\/p>\n<p>Pour the mixture on the thali and spread evenly.<\/p>\n<p>Let the mixture set for a few hours.<\/p>\n<p>Garnish with almond and pistachio slivers.<\/p>\n<p>Add silver foil pieces if you want.<\/p>\n<p>Cut into small squares.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Nearly every Indian has a sweet tooth and craves to have some nice sweets, specially after their meals and on special occasions.
