Just on one of these trips few years back, I found this savory snack twists called Murukku. These amazing round shaped Murukkus go so well for an evening snack, that I adopted them as a substitute for various branded biscuits and chips. Murukku’s can be bought from a few snack shops in South India. However, being true to the chef and foodie within me, I tried my hand at making them at home. I must admit that they turned out really delicious and tempting. I used rice and gram flour (besan) mixture to make a dough for the Murukku’s while I pressed them in to shape with a local piston press I bought some time back. The press allows me to make various shapes from straight to twisted and is a must to have tool for a chef’s kitchen. The dough is just deep fried enough to get a lovely taste. Use this recipe to create wonderful Murukku’s at home.

Ingredients needed for Murukku

Rice flour – 2 cups

Besan – 1/2 cup

Butter – 2 tbsp melted

Salt to taste

Red Chili powder – 1/2 tsp

Sesame seeds – 1 tsp

Oil for frying

How to make Murukku

Mix all the ingredients and make a soft dough using water.

Let the dough rest for ten minutes.

Fill the dough in a piston press and make desired shape on a plastic sheet.

Heat the oil in a non stick pan.

Once the oil is hot, fry the shapes till golden brown from both sides.

Remove on a kitchen towel.

Cool and store in a air tight container.

Serve Murukku with tea or coffee.

During my various travel sojourns across Southern India, I always find something new and something different which amazes me with how much there is in India to discover.
