Any Christmas party in the west is just incomplete without a perfect roast, various meats are generally used for these roasts and the turkey is the most famous one. However a lot of people who do not prefer turkey and have smaller families may go in for smaller birds and make chicken roasts. So today I tell you how to make a perfect Christmas Stuffed Chicken Roast for your party at home, the stuffing’s I chose to do included eggs, potatoes, onions, cashew nuts, raisins, however you can modify these as per your personal preferences. I had initial apprehensions about the dish, however it came out perfectly well and everyone enjoyed a teaser before the party. Ingredients needed for Christmas Stuffed Chicken Roast

(serves 4-6)

Chicken – 1 full

Strong thread – about 1 feet

For marination

Dahi – 2 tbsp

Red chili powder – 2 tsp

Turmeric powder – 1 tsp

Salt to taste

Red food color – 1/2 tsp

Garam masala powder – 1 tsp

Ginger garlic paste – 2 tsp

Lemon juice – 2 tsp

Olive oil – 1 tbsp

For stuffing

Onions – 1/2 cup (sliced)

Potatoes – 2 small

Eggs – 2

Cashew nuts – 10/12

Raisins – 12/14

Oil – 1 tbsp

For garnishing

Broccoli – 1

Peas – 1/4 cup

Baby tomatoes – 8/10

Baby corn – 5/7

Fruits like orange/ grapes

How to make Christmas Stuffed Chicken Roast

Preparation time: 25 min

Cooking time: 1 hour 30 min

Marination

Clean the chicken from outside and inside.

Mix all marination ingredients in a bowl and apply all over the chicken and inside.

Make incisions over the chicken in V shape (3/4 on each side)

Cover with cling foil and refrigerate overnight.

Stuffing

Cut potatoes in 2 pieces and boil.

Boil the eggs and remove the shell.

In a kadhai take oil and fry onions, cashew nuts and raisins till golden brown.

Baking

Take the chicken out, place it on the oven tray and fill inside with potato pieces, eggs and fried onions, cashew nuts and raisins.

Tie the chicken legs with the thread properly so it does not come loose.

Apply light oil with a brush all over.

Spread half each of baby corn, baby tomatoes, peas and broccoli around the chicken.

Pre heat the oven to 180 C.

Bake the chicken for about 50-60 min (until done, depends on the size of chicken)

Garnishing

Spread rest of baby corn, baby tomatoes, peas and broccoli around the chicken.

Place the fruits around the roast.

Serve hot.
