Kadhi has been a main standing dish in the northern and western Indian cuisine. It is made from besan in many different varieties and served with roti or rice. Many people add pakora to the preparation, while some people use vegetables. At our home kadhi pakora used to be a weekly affair for us and as kids and we used to look forward to kadhi chawal in our lunches. Being the mango season, I added them to my preparation to make Aam Ki Kadhi. I got a wonderful sweet and tangy taste which went very well with rice. Just temper with right amount of chilies and enjoy a perfect flavor or this kadhi at home. Here is Aam Ki Kadhi Recipe for you.

Ingredients (serves 4)

  • Besan – 3 tbsp
  • Dahi – 1 & 1/2 cup (keep it out overnight to make it sour)
  • Ginger – 1/2 inch piece
  • Mango – 1 small
  • Salt to taste
  • Turmeric powder – 1/2 tsp
  • Dry red chilies – 3 to 4
  • Zeera – 1 /2 tsp
  • Heeng – 1/4 tsp
  • Water – 4 cups
  • Oil – 2 tbsp

For tempering

  • Oil – 1 tbsp
  • Sarson seeds – 1/2 tsp
  • Dry red chilies – 2
  • Curry leaves – 1 sprig

How to make Aam Ki Kadhi

Preparation time: 10 min.

Cooking time: 50 min.

  • Mash the mango into a puree and keep aside.
  • Mix dahi with besan to form a batter and keep aside.
  • Heat oil in a pan and fry zeera, heeng, dry red chilies for a min.
  • Add the besan batter with water, salt, turmeric powder and mashed mango.
  • Cook until its done (about 45-50 min.)
  • Heat oil for tempering, fry the dry red chilies, curry leaves and sarson seeds
  • Pour over kadhi.
  • Serve hot.
