If you are one of those who consider this simple lunch as bliss, congratulations, you are one amongst millions! For millions, the best food one can have is Daal and Roti with Onion and Green Chilli. The daal in this photograph is Chaney Ki Daal Fry with Phoolka/ Tawa Chapati. Daal fry may sound like a fried dish, but in reality it is not. It is made by taking split yellow gram lentil and soaking it in water for a few hours.An onion and tomato paste is made on the side and masalas and ginger-garlic paste is added to it. A little bit of refined oil is taken and put in  a wok. This paste is added to the wok and allowed to be cooked for a while.  Boiled daal along with water in which it was boiled is added to the wok and brought to a boil. No separate tadka is given.

This is very basic recipe, so basic that you hardly get it in any restaurant, but when made well with its simplicity intact, it beats best of vegetarian dishes hands down. When it comes to placing sides to this Daal Roti combination, nothing beats an onion cut into four pieces and a green chilli split from the middle. Somehow, adding ghee to the phoolka takes that crispiness of freshly baked bread away. If you don’t mind compromising on that fresh from the tawa feeling, go ahead and and spread ghee/butter. Enjoy!
